Chocolate cake with just a hint of raspberry and coffee flavor makes an impressive dessert to serve for a special birthday or any occasion. You won't be able to tell that this moist and delicious recipe is egg-free, dairy-free and vegan.
VEGAN RASPBERRY MOCHA CAKE
INGREDIENTS:
3 cups flour
1 1/2 cups sugar
2 tsp baking soda
1/2 cup cocoa
1/4 cup oil
1 1/2 tsp vanilla
2 tbsp vinegar dissolved in 1/4 cup water
3/4 cup strong brewed coffee or espresso
3/4 cup raspberry preserves
PREPARATION:
Mix together flour, sugar, baking doa and cocoa in a large mixing bowl.
Slowly incorporate oil and vanilla, and then vinegar in water, coffee and raspberry preserves. When batter is well mixed, it will be smooth and creamy.
Pour into greased and battered cake pans and bake at 350 degrees for 25 minutes or until done. You'll know a cake is done baking when you stick a toothpick into the top and it comes out clean, with no cake on the edges.
Allow to cool before frosting.
Enjoy!

Ener-G Egg Replacer is an excellent substitute for baking eggless cakes. It's a mixture of starches and leavenings. You use 1/2 tbsp of the powder and 2 tbsp water per egg, and mix it up before adding to the batter. It's kind of expensive, but it lasts forever and it goes a long, long way. Bananas or applesauce are good, but they tend to add banana or apple flavor to your cake.
"Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz has recipes for all sorts of nifty little cupcakes.
"La Dolce Vegan!" by Sarah Kramer has a number of awesome treats, as do the books she co-authored with Tanya Barnard, "How it All Vegan!" and "Garden of Vegan."

I second Vegan Cupcakes Take Over The World, they are amazing, I especially love the chocolate cupcakes with peanut butter cream. Sinfully Vegan is also really good, there are some really awesome cake recipes in there.

Lemon-lime cake:
1 yellow cake mix
1 12 oz. lemon-lime soda (diet is ok)
1 cup canned pineapple chunks - drained
1 cup canned mandarin oranges - drained
Spray cake pan with non-stick spray. Place fruit on bottom of pan. Mix cake mix with soda. Pour over fruit and bake at 350 for 35 minutes or until toothpick inserted in middle comes out clean.
Or Do a chocolate fondue instead of cake:
You can make a shortbread cookie - 1 part flour, 1 part sugar, and 1 part butter (I like this recipe because I can make as much or as little as I want), Roll these into 2 in by 1/2 in logs. bake at 375 for about 8-10 minutes, until lightly browned. let cool.
In the mean time, cut up some bananas into one inch pieces. Lightly toss with some lemon juice to prevent browning. Get some strawberries too. Arrange cookies and fruit on tray around a bowl. When you get ready to serve dessert, Take about 1 cup of semi-sweet or dark chocolate chips. Melt in the microwave.(takes only a minute or 2 - stop every 45 secs. to stir chips so they don't burn) Pour chocolate in the bowl in the middle of the tray. Yummy! If you just do the cookies, add cups of sprinkles, nuts and coconut to dip chocolate dipped cookie in as well...

I can buy the cake mix packs you get in supermarkets - the ones that require eggs and water to be added - and make up the cake mix without the eggs. It works out just fine and I haven't had any failures.

Baking a cake, eggless...forget it! Pie?...or I guess you can't make crust either because of the butter or lard needed to make it. Fresh fruit, I guess, just plain.
