Most mexican food is vegan.
Torillas, rice, beans, quacamole, salsa, jalapenos. If it has meat, it's not really Mexican in the first place.

Make beans the foundation instead of meat. Look for refried beans and black beans with no animal fat. They can add salsa, onions, mushrooms, and other veggies to make a burrito. They also make some good vegetarian chili (which is probably also vegan) that you can serve with some torilla chips on top. I find it at walmart right alongside the regular chili. That should make a substantial meal. Don't worry too much and focus on what they CAN eat, not what they can't.

Easy
Make a rice and black bean burrito. Get some disgusting soy cheese ( I am sure your friend will not mind) and spread it over the tortilla, you can also add salsa and guagamole for taste. Make sure the rice has a lot of taste. For the beans, the taste is given by the sofrito you are gonna make with diced onion, tomatos, bell peppers and garlic. Add some cummin for taste and DONE!
I found this also. This is a copy and paste so dont sweat it.
Zesty Vegetable Enchiladas
This is a modified version of the grand prize recipe in a local
contest. The original had some oil for stir frying and 6 oz of Monterrey
Jack cheese (with peppers). I substituted Guiltless Gourmet Cheddar con
Queso (I think that is its name), which is a fatfree cheese sauce with
peppers in it.
Zesty Vegetable Enchiladas
1 1/3 c water
1/2 cup dry lentils
1/4 tsp salt
10 flour tortillas
non-stick cooking spray
2 medium carrots, thinly sliced
1 1/2 tsp chili powder
1 medium zucchini, quartered lengthwise and sliced
one 14 1/2 oz can chunky chili style stewed tomatoes or Mexican
style stewed tomatoes, cut up
OPTIONAL: 1 jar of Guiltless Gourmet Cheddar con Queso (Mild)
Preheat oven to 350 F. In a medium saucepan combine water, lentils and salt.
Bring to a boil, reduce heat. Cover and simmer for 15 to 20 minutes or
until tender. Drain, rinse with cold water. Set aside.
Wrap tortillas in foil. Heat in a 350 F oven until warm (10 mins).
Spray a 2 qt rectangular baking dish with non-stick cooking spray. In a
large skillet, stir-fry the carrots and chili powder in some water for
2 minutes. Add zucchini and stir-fry intil tender. Remove from heat.
Stir in lentils and half of the stewed tomatoes. Stir in half of the
Cheddar con Queso (if desired - makes the recipe lacto).
Spoon veg mixture over the tortillas, roll up and place seam side down in
the baking dish. Cover with foil.
Bake in a 350 F oven for 8 minutes. Remove foil, bake for 7 to 12
minutes or until heated through and tortillas are crisp.
In a small saucepan heat the remaining undrained tomatoes, spoon over
enchiladas. Top with remaining Cheddar con Queso. Bake for one more minute.
DONE

If you are wanting to make burritos or nachos you can use beans or veggie Ground round original from Yves as a meat substitute. There is also soy cheeses and soy sour cream called tofutti sour supreme.
And LOTS of veggies like olives, tomatoes. lettuces peppers, onions, banana peppers.
Been a vegan for all my life and have made this for Many meat eaters and vegan people and they really enjoy the substitutes :)

What you will locate is Cal-Mex. this won't have the spice of Tex-Mex, yet makes use of so plenty greater clean fruit and greens. If you're doing tacos (which I guess are really Tex-Mex), there are vegan taco mixes that are flavored veggie crumbles. If you get soy cheese, watch out for casein. You can use soy milk instead of cows' milk in equal proportion. Roads End has packets of mix called Chreese, which makes cheesy sauces.
