Pirate cuisine generally fell into one of two categories - plentiful or starvation. While at sea for long periods of time, fresh food would be scarce. But once the ships docked in the Caribbean, then the pirates would have plenty of food on which to feast. For your theme party I recommend a combination of shipboard and island dishes.
Salmagundi - This pirate stew, based on a British recipes, was essentially a conglomeration of whatever they had on hand. This Americanized version of the dish has the easiest ingredients to locate. Pirate Salmagundi might include turtle meat among other uncommon ingredients.
Hardtack - This type of non-perishable biscuit was a staple aboard pirate ships. You can serve these with your Salmagundi, but they're not too exciting on their own.
Codfish Fritters - Seafood would most certainly be part of a pirate's diet.
Jerk Chicken - When pirates landed on an island in the Caribbean, the eating was good. Barbecue was a common method for preparing food. This recipe will give you one of the popular, although spicy, flavors from the islands.
Puerto Rican Rice with Pigeon Peas - This is a very hearty side dish, and if you leave out the salt pork, it would serve as a main dish for any vegetarians at your party.
Sweet Potato Bread - This dessert bread incorporates many of the ingredients the pirates woul enjoy on the islands such as sweet potatoes, coconut and bananas.
Coconut Balls - You could rename these little sweets "canon balls" to tie in with your party theme.
Planters Punch - This punch will capture the spirit of pirate grog with the rum and citrus flavors, but a few other ingredients make it much more interesting than that.
Fruit Punch - Here's a punch for your friends who don't indulge in alcohol. Sadly, they'll probably win all the prizes for walking the plank without falling.

You could serve enchiladas shaped like miniature crocodiles and cakes that look like a bloody hand stump. Of course, it would go without saying that red Kool-Aid would be on tap. Then just take it from there.

Alcohol: beer & British ale in chilled mugs, rum punch
Non-alcohol: ginger ale, root beer in chilled mugs, lemonade or limeade to fight scurvy as previous members have mentioned
Since the Pirates of the Carribean movies are popular - serve Jamaican food. (e.g. jerk chicken drumsticks, fried plantains, rice & beans) Search foodnetwork.com for recipes.
Dessert can be popsicles, sliced tropical fruits or sorbet/ice cream.
Or you could go w/ a pub food theme. Cornish Pasties, Shepherd's Pie, fish & chips.
For dessert - triffle. (sponge cake layered w/ jam, pudding & whipped cream)

Add green food coloring to ham(makes it seem like old salted pork)
Hard Tack basically un-salted crackers
For adults: grog(1 part rum/1 part water) for kids substitute root beer for the rum.
Rough cut fruit platter.
Hard cheeses with the little swords in them.
For adults,whole oranges spiked with rum or vodka.
For adults: a punch called MOJO:
1 bottle rum
1 bottle vodka
1 bottle tequila
1 bottle gin
1 large can of orange juice
1 large can of pineapple juice
Hold on tight,this has 1 heck of a kick.it tastes like kool-aid and will sneak up on you.

If you can find a cookie cutter shaped like an anchor you could make sugar cookies or even little sandwiches shaped like anchors, that would be super cute. Or you could get really creative and make a cake with a boat or a skull and crossbones on it. Or you could decorate cookies with icing and put skull and crossbones on those b/c they're pretty easy to draw. If it's an adult party, definitely have rum :)

Caribbean style finger vegetables with Dip.
Seafood appetizer IF having food.
Spicy chips.
But soak cookies in rum mix with flour mix etc for Taste.

Wow, I have never thought of that before. Good question. All I can think of right now is root-beer in the glass bottles. I will continue to think about that today and let you know if I come up with anything else good.

Peg-leg Kabobs (use wooden skewers for the meat cubes, onions, peppers, mushrooms & tomatoes--be sure to soak them first)
Or BBQ peglegs (chicken drumsticks)
or appetizer peglegs (wooden skewers with cubes of cheese, olives, and sausage).
Grog (any sort of punch)
Nestle Treasure candies--they are chest-shaped.
Decorate the table with foil-wrapped chocolate "coins" from the dollar store..
