Do I look at color, texture, go by touch, brand, price? Assume that I can't open the package.

By good I am referring to the taste, not whether it has expired or is going back. I am asking about the taste and quality of the product. I am asking this question because I always here vegetarians at salad bars say that they don't like the tofu at the salad bar, but they buy "good" tofu at home. So I am assuming that there are better quality tofus and lesser ones.

Tofu comes in a lot of different styles, brands, and prices, so it's virtually impossible to give you a single method of comparison.

Instead, you should consider what kind of meal you're having.

If it's meant to be a meal on its own (not a bad part of an otherwise healthy diet, though I wouldn't do it!), you might want something firm to give your mouth something to do. Firm tofu fries nicely on low heat, if you want to go that route.

If it's meant for a salad or noodles, or something like that, go for something that will crumble or dice easily (not necessarily the firm type).

If it's meant to be included in a sandwich, along with, say, lettuce, tomato, and sprouts, then get something that slices easily (again, not necessarily the firm type; as I'm sure you know, tofu makes a great cheese substitute for the lactose intolerant among us!).

I think you get the idea, but, by all means, check-out the links, below. And don't squeeze the Charmin . . . I mean, the tofu! It's rude to both the retailer and the customer who doesn't want to see your fingerprints or indentations in the product! If you're in an Oriental grocer, they *might* give you samples, especially if they make the stuff on the premises, in which case, it's usually wrapped in an inexpensive linen or cheese cloth, tied on a string, and kept in a brine or clear-water filled bowl; one shop I know of had a flavor-of-the-week, such as raspberry vinagrette; arguably, the best combination I've ever tasted!

It is a matter of preference: it is made with different textures, flavors, which change its appearance. You have to taste and choose your favorite. (I like the 'silk' one)
BUT, have you ever watched the manufacturing of tofu?
you would never even touch it.
despite the hype, what makes it such a good substitute for other proteins that do not require so much questionable processing? It has an impact on ones hormones that may not always be desirable. Research it.

Most tofu packages have dates on it. That is a good indication. Otherwise if there is a lot of water in the tofu, then you look at the water. If the water looks thick and slimy then that is a sign it went bad.

Look for "different brands of tofu" reviews online
make sure it's not expired
get the right firmness you want (silken, firm, medium)
and cook it right :o) to achieve the flavor you want
or enjoy it straight from the box! :o)
but pretty much they all taste the same..or very similar

my favorite is Lite Nasoya firm tofu! :o)

then there is ......just make your own tofu-it is not that hard to do-time consuming-but not hard. then you can season it as it is being made or make soft or firm what ever you like your making it. our favorite brands are "White Wave" & "San Diego Soy Dairy" both frim, there are a feww box types that are very nice soft ones you know for making scrambled tofu dishes. anyway hope this helps

A. Make sure it's organic
B. Make sure you check the date
C. The color should be very close to white. Don't buy it if it looks discolored in any way.

they have these morning star meal starter steak and chick n strips and those are actually very good if you marinate them in teryiaki or something

you dont need to taste it?...all tofu tastes naff!...its what you marinade it in that makes it taste better...
