I always ask the butcher what the best steak is they have, and tell them where I'm going to be cooking it (either over flame or in a cast-iron pan). This helps them give you the best one going. Usually I end up with strip loins or NY cuts. Tenderloin doesn't have as much flavor. Regardless of whether I'm cooking over the grill or in a cast iron pan, the technique is the same: take it out of the fridge so it will be at room temperature when you cook it. Start off at high heat and sear both sides. You don't want to be moving the steak around while it is searing! Plop it down, and let the carmelization happen. Then flip. Here's where knowledge comes in. You need to know what a rare, medium, or well-done steak feels like. Rare is going to feel like your bicep when it is relaxed. Cooking by feel, you probably don't want to get a steak that's more than about 1-1/2 inches thick -- otherwise you might end up with one that's cold in the middle. If you're looking for something that's a little more cooked than that or is thicker than 1-1/2 inches, I'd usually turn the gas burner down or put the cast iron pan in the oven at 350 to finish the cooking.

I'm a vegetarian, so...no.

Although, 20 oz. is for little girls. Here in Texas there is a restaurant that serves 64 oz. steaks with a giant salad and a baked potato as big as your head. If you can manage to eat that, your meal is free. Good luck in the minor leagues.

I bow in honour to your intellect.

Troll.

Juices in a steak: blood and metabolic waste.

Meat: dead, decaying, rotting muscle tissue of a corpse.

But hey, to each one's own.

And do try to put your stuff in the correct section.

i'm assuming you intentionally posted a steak question in the vegetarian & vegan section to piss us off. but no worries, i'm not pissed.

could you please be sure to put it in the right category next time, though?

thank you. :)

Careful. The whiners on the veg section are going to report you.

I simply asked yesterday why Yahoo has a specific vegetarian section but no section specific to grilling or meats (which is NOT the same as general recipes. What do cakes have to do with grilling?) Anyway, some sniveler reported me for it. I thought it was a totally valid point.

Weak.

Oh, and I prefer my steaks med-rare with garlic, salt, and coarse black pepper.
