We want to serve either Whitefish or Halibut at a black tie affair for 150 people. However, we are concerned with the fish drying out. Is it too risky to serve either one of these options? Should we play it safe and serve Sea Bass as it has a higher fat content? WE DO NOT WANT TO SERVE SALMON. Thank you.

Whitefish will be fine. Being from the Midwest and having lived in Alaska, I would eat whitefish over halibut any day. Halibut will dry out as fast or faster then whitefish. I eaten then both in different ways (fried, smoked, baked, poached) and have found whitefish to be much better table fare. Halibut is over rated cod anyways. And on the note of it drying out it doesn’t matter what the fish is, you should be asking the people serving it what their capabilities are. Any fish will dry out if it sits too long. I have baked fresh caught whitefish in my ice shack and picked at it for a couple hours and it was still fine. Tasted great cold...

Stick with your halibut on this one! You should be fine if you've cooked it in a steaming table with a garlic infused broth. The steam from the table will keep it moist if its a buffet. If not, then the chef's should be preparing the fish shortly before its served and it should be ok. Consider serving it with a wine and caper sauce, wild rice pilaf, and fresh vege combo.
