yes but cheese contains calves' (cow's little babies) stomach linings. its called rennet. however! that chese with the red waxy coating that's rennet free. enjoy without guilt!
im not a spaghetti genius
hot olive oil, red onion in a pan, then mushrooms (add sliced corgette if you like) and red pepper, packet of beanfeast OR quorn mince and an oxo cube (vegetarian o course),
squirt of tomato paste
then
tin of chopped tomatoes,
teaspoon of balsamic vinegar, half a tea spoon of sugar, stir it in, (enhances tomato flavoured goodness!), add some garlic powder (found in your supermarket near the jars of spices)
add torn up parsley, basil and oragano OR italian mixed dried herbs
let it simmer and cook down till it gets all saucey (put some music on, read a book) check it every few minutes, serve with your pasta and edam (rennet free) cheese

Amy's (www.amys.com) makes several varieties of spaghetti sauces, all of which are vegetarian (and some are even vegan). If you want more oomph, toss in some mushrooms, some onions, and even some crumbled up tempeh.
Boil the pasta, heat up the spaghetti sauce, pour the sauce over the pasta, sprinkle on some nutritional yeast or a vegan parma, and you've got yourself a tasty meal.

Its mostly hopeless BUT - here is a suggestion
Try a basic red sauce and add at least 3 different types of mushrooms (button, porcini, portobello, shitake etc.+some truffle oil) also add chopped capers, olives (black and green), maybe eggplant, lots of garlic (raw and roasted), be sure to use fire roasted tomatoes + chopped sun dried tomatoes for your sauce - lots of layers of flavor going in this sauce. Good Luck
I know you are vegetarian, but this sauce is so much better with a bit of parmesan cheese (you could serve this on the side so your non-vegetarian guests could have some).

It's not that complex. All you need to do is not include the meat. You can also use wheat pasta, rather than white. Also, Becky's idea is good too. Ragu makes a great vegetarian sauce, with mushrooms, zucchini, carrots, and other such vegetables included.

I recently made some DELICIOUS sauce using roma tomatoes, a half jar of sun dried tomatoes, a couple dates for sweetness (you could add a little honey or agave nectar or whatever you use for sweetener), a bit of garlic, pepper, SALT!, onion, basil, and a splash of olive oil. I blended it in a food processor. It was so good I've been eating it on everything.
