I really want to serve Halibut, but I am worrying about it drying out. I have heard that Sea Bass is the best to serve for a large group of people b/c it has a high fat content and is difficult to dry out.

My first choice would be a Popcorn Crusted Halibut....is this too risky? Should I play it safe and go with Sea Bass?

The sea bass, go with the sea bass. You can't afford to have things go wrong when you have 150 to serve.
Practice on yourself and with your friends. When you've got this many people then you have to go with what has been a success in the past..

Once we had a banquet for 100 people and we served Tilapia with lemon zest and herbs
with mash potatoes and asparagus on the side. Even if alot of people dont like fish, Tilapia has a very smooth taste that you cant go wrong!

You want to go with an oilier fish. Salmon's a safer bet - you could do that with a popcorn/toasted hazelnut crust and Beurre Blanc!
