I had herpes (thx to my ex) and I did not know it until I had sex with the new man in my life 6 years later. I had an outbreak the morning after we had sex. It was caused by the rubbing and lack of sleep.
So yes, it can take a year or longer. I may have had some symptoms when I got it but I did not notice. Sometimes I got an ingrown pubic hair and it was a bit irritating. I did not look in there for every itch or sting, so I could easily had some outward sign of it but nothing as bad as it got after I started to have sex again.
You can have a blood test to check for herpes. I would advice having your sex partner tested for herpes because if he/she does then you know how to avoid getting infected in the mouth etc.
