I'm not Vegan myself, but one of my friends is. It's her birthday on Thursday and we have a night class together. I'd like to make a cake, but then I remembered that she was vegan. Any suggestions/recipes? Thanks!

VEGAN CHOCOLATE CAKE
(Serves 8)
This sure to be a party pleaser!

1/2 cup soft soy margarine
1 Tablespoon vinegar
1 cup soy milk
1 - 2/3 cups all-purpose white flour
2/3 cup unsweetened cocoa powder
1-1/2 cups sweetener
1-1/2 teaspoons baking soda
1 teaspoon salt
2 teaspoons Ener-G Egg Replacer
1/4 cup water
1 teaspoon vanilla
1/2 cup water
Put vinegar in cup and add soy milk. Preheat oven to 350 degrees. Spray 2 round layer pans, 8" x 1-1/2", with Pam, or slightly oil and flour.

Place flour, cocoa, sweetner, baking soda, and salt in large bowl of electric mixer, and mix together well with spoon. Mix Ener-G Egg Replacer and 1/4 cup water until smooth. Add margarine, vanilla, soured soy milk, 1/2 cup water, and mixed egg replacer to dry ingredients in bowl. Beat with electric mixer for 3 minutes at medium speed, scraping bowl frequently. Pour into prepared pans.

Bake for 30 to 35 minutes at 350 degrees, or until wooden toothpick inserted in center of cake comes out clean. Remove from oven and let cool in pans for 5 minutes. Remove from pans and cool on cake rack until cold Frost as desired.

VANILLA CAKE
(Serves 8)
Here’s a simple white cake recipe.

1/2 cup soft soy margarine
2-3/4 cups all-purpose white flour
2 1/2 teaspoons baking soda

1/2 teaspoon salt
2 teaspoons Ener-G Egg Replacer
1/4 cup water
3/4 cup soy milk
1/2 cup water
1-3/4 cups sugar
1-1/2 teaspoons vanilla extract
Spray two round 8" x 1-2/3" pans with Pam, or lightly oil and flour. Preheat oven to 375 degrees.

Combine flour, baking powder, and salt and set aside. Mix Egg Replacer and 1/4 cup water and set aside. Mix soy milk and 1/2 cup water, and set aside.

In large bowl of electric mixer, beat soy margarine until it is creamy, about a minute. Gradually add sugar until well creamed. Beat in vanilla. Add mixed dry ingredients and mixed soy milk/water alternately to creamed margarine, sugar, and vanilla, beating after each addition. Begin and end with flour mixture. (Add flour in 4 steps, liquids in three.) Add mixed Ener-G along with the third addition of liquid. Turn evenly into pans.

Bake at 375 degrees for 30 to 35 minutes, or until done (wooden pick inserted into cake comes out clean). Remove from oven and let cool on cake rack for 10 minutes. Remove from pans and let cool on rack until cold. Frost as desired.

Almost any vegan cookbook is going to have a desserts section.

You can use soy milk in place of cows' milk in equal proportion. You can also use rice milk in 7/8 proportion.

Ener-G Egg Replacer is a powdered blend of starches and leavening. You use 1/2 tbsp powdered replacer to 2 tbsp water per egg. Mix it before you add it to the batter.

Egg Beaters are made of eggs, so they are not vegan.

A good dessert cookbook to start with is "Vegan Cupcakes Take Over the World" by Isa Chandra Moskowitz.

The cookbooks by Sarah Kramer (two cowritten with Tanya Barnard) are also fabulous.

Chocolate Cake


Ingredients:

1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water (or ice coffee)
2 tsp vanilla extract
2 tsp vinegar

Preparation:

Preheat oven to 375°F (190°C). Use a small brownie size pan (no greasing required). Mix all the dry ingredients right in pan. Mix all the wet ingredients in separate bowl except the vinegar (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add the vinegar quickly and stir in — immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly.

Optional: after you add the vinegar, you can put some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand)

Ingredients:

1/2 cup oil
1 cup sugar
1-1/2 tsp baking soda
1/4 tsp salt
1 scant cup soy milk/rice milk/water

Preparation:

Mix ingredients and bake at 375°F (190° C) for 30 minutes in a greased pan

You can substitute soy milk and do like eggs for the ingredients in a cake recipe. Go to any health food store and you should find what you need. It can be done.

Sure.

You just need an egg substitute.

Most vegan cake comes out like halfway between a brownie and a cake, i actually think its better than normal cake.

look up the Imus Ranch on the internet.. its a ranch for troubled kids and all the food that is served it non-toxic and completely vegetarian/vegan.. i have the cook book theres some pretty tasty things in there.. you wont miss a thing

use sot milk, egg beaters (substitute)...or go to an all organic gorcery store like Whole Foods if there's one around where you live.
