Anything that is dry and a powder can *easily* be added to gluten (seitan) before cooking it! It takes some effort to find (actually, a lot of effort) but there are quite a few flavoring yeasts available 'to the trade'. They're a major source of the flavor in analogs (fake meats), the problem is finding a maker of them that is willing to sell them in non-commercial quantities. As an easy home substitute you can easily obtain dried mushrooms and powder them with a blade type coffee grinder or blender etc. The same method works with dehydrated vegetables.

If you're careful with the amounts (to avoid saltiness) you can mix in powdered boullion cubes like the Edwards&sons ones that replicate animal flavorings if you're so inclined. Salt-free Spike (found in health stores) can be used in fairly large amounts and is a personal favorite of mine.

You can also *carefully* fold in a small amount of the leftover pulp from juicing veggies, use too much and the seitan disintegrates when you cook it!

You can pretty much season gluten any way that you like. Nutritional yeast will give it an interesting savor & add some B vitamins. Garlic or whatever herbs & spices you enjoy would make it even better.
