Besides the store-bought coconut based one that someone already mentioned you can make your own from Ener-G Egg Replacer! I've done it before and it works quite well, the only drawback to it is that it only keeps about a day before separating.

Tough one there. You can not do a real Ranch Dressing with out Butter milk either so it will not be Vegan. I am allergic to Dairy, Soy & Eggs so Mayo is totally out. I am suaing allot of Raw Recipes with excellant luck.
I have a recipe that is a great hit.
Ranch Dressing by Jennifer Cornbleet from her Uncook Book "Raw Made Easy"
Yield 1 cup, 1/4 is a serving
1cup *soaked Raw Cashews, then drained
3/4 cup Water
2 TBS. Fresh Lemon Juice
1/2 tps. Garlic Powder
1/2 tps. Onion Powder
1/2 tps. Sea Salt
1 TBS. Minced Fresh Basil or 1tps. Dried Basil
1TBS. Minced Fresh Dill or 1 tps. Dried Dill
Place the Cashews, Water, Lemon juice, Garlic powder, Onion powder & Salt in a blender and process until smooth & creamy. Add basil & Dill pulse briefly just to mix.
Store in a sealed container in fridge. Will keep for 5 days.
We use this instead of Cesar dressing too.
*Soaking Cashews
1 Cups Raw Cashews in enough clean water to cover..soak 2 hours then drain. A little longer will not hurt.
Variation:
For a Thousand Island Dressing add 1/2 a chopped Red Bell Pepper(about 1/2 cup) to the blender

Yes there is Coconut Mayonnaise. I seen it at only one health food store.. they stocked it because of request of one of their regular customers who had an allergy to soy products!
Brand I had was Dasan. Coconut Mayonnaise is great stuff but rather pricey! I only bought it once!
I can make my own with coconut sour milk and some coconut oil and it is cheaper don't look as good as the bought stuff but taste is what matters!
Many recipes that call for soy you can use coconut milk or coconut oil!

I have a friend who is terribly allergic to soy and all products containing soy. He only eats Helmans Canola Mayonnaise and says that it does the trick.

the brand is called Hampton Creek, the mayo is Just Mayo, the ingredients are
non-GMO expeller pressed canola oil, filtered water, lemon juice, white vinegar
2% less of the following,
organic sugar, salt, pea protein, spices, modified food starch, beta carotene.
this product is non-GMO and vegan. I love this product and it is affordable I am allergic to soy as well

Just use a really good extra virgin olive oil (you don't mention that one). If you wanted to add a little zing and you can find it - sorrel leaves will give you a nice lemony bite to the salad. But just good olive oil makes a great dressing.

There's not a whole lot of them out there. How about just trying to make a recipe of your own? It's really hard to find them but goodluck anyway.

Try a vinegar and oil dressing instead - it's better for you and tastes really good on sandwiches. Just shake up some olive oil with some red wine or balsamic vinegar.
