Ingredients:
2 tbsp butter
1 onion, small
1 garlic clove, minced
2 tbsp jalapeno or chili pepper
2 tbsp all purpose flour
1 cup milk
1 tomato, medium, chopped
1 cup cheddar cheese, shredded
Instructions:
Combine butter, onion, garlic, and peppers in a 4 cup microwavable
casserole. Microwave uncovered at High for 2 - 3 minutes or until
softened. Blend in flour and microwave at High for 30 seconds.
Gradually whisk in milk until smooth. Add tomatoes; microwave,
covered at High for 3 5 minutes or until mixture comes to a boil and
thickens, whisking once. Stir in cheese until melted. Serve warm with
tortilla chips or veggies. Makes 2 cups.

CHILE CON QUESO
Yield: 1 1/4 cups
1 c Asadero cheese; shredded *
4 oz Jalapenos, chopped;
-drained, OR
4 oz Poblanos, deveined &
-julienned
1/4 c Half & half
2 T Onion; finely chopped
2 ts Cumin, ground
1/2 ts Salt
Heat all ingredients over low heat, stirring constantly,
until the cheese is melted. Serve warm with tostaditas.
(If this is made with julienned poblanos, it's called
"queso con rajas de chile").

The ingredients are part skim milk cheeses (cultured pastuerized milk and skim milk, salt, and enzymes), nonfat dry milk, sodium citrate, soy lecithin and titanium dioxide (for color). A true Asadero is stringy, soft and elastic when heated Just in case you cannot find the brand in your local stores, there may be a comparable type of cheese you can purchase and try out instead. It does make a difference which Asadero cheese you use. This website has the best brand I've found to use and some more recipes.

Do you mean nacho dip?
Get a large flat bowl and spread the following one on top of each other:
- refried beans on the bottom
- sour cream (mixed with some taco seasoning)
- one jar of salsa
- chopped red peppers, jalopeno peppers
- grated cheese such as cheddar or monteray jack
Serve with tortilla chips for scooping up the dip
