souvlaki. get chicken breast or pork tenderloin and cut into cubes. put into bowl, cover with olive oil, enough to toss in.
Garlic, lemon,pinch of salt.and other spices you enjoy.
toss and let sit for a bit. take cubes,about 5 of them,put on skewer stick,and barbeque.
serve with tzaziki,which can be premade, or, look up a recipe,it is yogurt based, but buying may be easier anyways
Can be served as sticks, OR on a pita with veggies like lettuce,tomato,onions...
make a nice salad. lettuce,tomatoes,feta cheese,cucumbers, olives and onions,peppers if you like. you can also buy a greek salad dressing at the grocery store for it, or use vinegar,olive oil and lemon. Its pretty simple,meat and sald.

Moussaka

Ingredients
75ml/6fl oz olive oil
1 large onion, finely chopped
675g/1½lb lamb mince
3 cloves garlic, chopped
1.25ml/¼tsp cinnamon
1.25ml/¼tsp allspice
2 x 400g/14oz tin of chopped tomatoes
1 tbsp fresh oregano, chopped
2 bay leaves
1 tsp fresh, soft thyme leaves
175ml/6fl oz white wine
4 medium aubergines, cut into 1cm/½in slices
salt and freshly ground black pepper
plain flour, for dusting

For the Béchamel Topping:
85g/3oz unsalted butter
85g/3oz plain flour
900ml/1½pt milk
85g/3oz parmesan, grated
115g/4oz gruyère, grated
2 egg yolks
1 egg



Method
1. Heat 2 tbsp olive oil in a large casserole dish. Add the onion and cook gently for 10 minutes or until the onion is soft, but not coloured. Brown half the lamb in a frying pan and add to the onion. Add the garlic and break up the meat with a wooden fork until it has a loose texture. Brown the remaining lamb.
2. Stir the cinnamon, allspice, chopped tomatoes, oregano, bay leaves and thyme into the casserole. Add the rest of the browned lamb and de-glaze the pan with white wine. Pour straight into the casserole dish, reduce the heat and simmer for approximately 1 hour.
3. Place the aubergines in a colander, sprinkle with salt and leave for 30
minutes. This draws out any bitter juices.
4. Meanwhile make the bé chamel sauce. Melt the butter in a non-stick pan and stir in the flour. Take off the heat and gradually stir in the milk. Return the pan to the heat and stir continuously until the sauce thickens. Simmer over a gentle heat for 5-8 minutes. Remove from the heat, stir in 55g/2oz of the parmesan and 55g/2oz of the gruyère cheese and season with salt and pepper.
5. Rinse the aubergines and pat dry. Dust the aubergines with flour and fry in batches in the remaining olive oil until golden on both sides, about 8 - 10 minutes. Drain on kitchen paper. Set aside until ready to construct the moussaka.
6. The white sauce should now have cooled enough to whisk in the egg and egg yolks.
7. Cover the base of an ovenproof dish (30 x 20cm/12 x 8in) with a third of the mince then cover with half the aubergine slices. Repeat the layers, ending in the last of the mince, then pour over the cheese sauce. Sprinkle over the remaining parmesan and gruyère. Bake in a preheated oven at 180C/350F/Gas4 for 50-60 minutes, until bubbling and golden. Allow the moussaka to settle for 5 minutes before cutting into squares and serving.
8. Serve the moussaka with a chunky tomato, cucumber, parsley and mint
salad and crusty bread.

Souvlaki - barbecue chunks of any meat on the stick served with garlic sauce (sour cream based) really delicious. Marinate meat first in lemon juice/cider vinegar with spices like oregano for ex. and lots of garlic.

Chicken Manestra (orzo)

Ingredients:
1 Whole Chicken (Cut in pieces)
2-3 Clove Garlic (Crushed, to taste)
2 Tablespoon Olive Oil
1 Medium Onion (Chopped)
1/2 Cup Orzo
1-2 Pinch Pepper (To taste)
2-3 Pinch Salt (To taste)
3 Tablespoon Tomato Paste
4 Cup Water
Directions:
Saute onion in olive oil.

Brown chicken pieces.

Add water and tomato paste, simmer chicken for 30 minutes.

Add orzo and remaining ingredients, stirring with a watchful eye until orzo is tender.


Green beans in tomato sauce


Ingredients:
2-3 Clove Garlic (To taste, chopped)
2 lb Green Beans (Fresh)
1 Large Onion (Chopped)
1 Bunch Parsley (Chopped)
1 Pinch Pepper (To taste)
4 Medium Potatoes
2-3 Pinch Salt (To taste)
1 A Little Sugar (To taste)
4 Medium Tomatoes (Ripe)

Directions:
Clean and wash the beans.

Warm the oil in a pot and simmer the onions.

Add the rest of the ingredients (except the potatoes) with a little water and slowly cook for 20 minutes.

Cut each potato into 4 wedges and put them in the pot last.

If needed, add more water and let the food boil for a while.

Serve hot. with pork chops or steak or grilled breast of chicken

Meat balls “Smyrne” (“Soutzoukakia”) in a tomato sauce.

Ingredients:
1 Cup Bread Crumbs
1 Pinch Cumin (To taste)
2 Clove Garlic (Pressed)
2 lb Ground Beef
1 A Little Olive Oil
1-2 Pinch Pepper (To taste)
2-3 Pinch Salt (To taste)
1 Pinch Sugar (To taste)
4 Medium Tomatoes (Ripe)
Directions:
Mix the ground beef with the bread crumbs (slightly moist), garlic, cumin, and salt & pepper.

Knead into elongated meat balls (see photo) and fry in olive oil.

Drain most of the oil, saving 1/2 a cup.

Use it in a clean pan to fry the tomatoes, peeled and grated.

Add the sugar a bit of salt & pepper and simmer for 10 minutes.

Place the meat balls in the pan and simmer for a while longer before serving.

serve over rice or french fries

Kotopoulo me Patates
Chicken with potatoes
Ingredients:
1 Medium Chicken
2-3 Clove Garlic (Sliced)
2 Medium Lemons
4-6 oz Olive Oil
1-2 Pinch Pepper (To Taste)
2.20 lb Potatoes
1-2 Pinch Rosemary (To Taste) (optional)
2-3 Pinch Salt (To Taste)

Directions:
Clean the chicken and remove the excess fat.

Rub the chicken with lemon and season with the salt, pepper and rosemary.

Oil a baking dish.

Peel and cut the potatoes into quarters and place in the oiled baking dish.

Place the chicken in the middle of the tin and add a few cups of water and the garlic slices.

Bake in a preheated, medium oven for 1 1/2 hours.

Stuffed grape leaves are easy. You follow the usual recipes for stuffed cabbage leaves. The difference is that you pick and clean grape leaves to sue as the wrappers and then handle them just as you would the cabbage part.
