Buy some morningstarfarms brand bacon( vegetarian) and make some veggie BLTS... toast 2 slices of bread and spread mayo or mustardmix and add lettuce tomato and morningstar veggie bacon( cooked iin micro or stovetop) on topof sandwich,,,add some applceslices with caramel dip or veggie chips from the WHole foods store... for dinner try morningstarfarms crumbles with your fave pAsta sauce and spaghetti noodlesyou can add olives or bell peppers or anything really and have a vegan dinner ORyou can make meatloaf from morningstarfarms go to their website or ask for my email and i would be glad to email you the recipe and soups and you can even make a chicken potpie from morningstar farms soy chicken strips and i have my recipe if yoou would like to email me

The only non-animal source food that will give you complete protein is soy, but there are some health concerns about eating too much of it (see the first two references below). Since it comes in many forms (tofu, miso, tempeh, soy milk, soy flour, textured soy protein, and just plain beans) there are lots of ways you could fix it for variety. With tofurky, tofu burgers, sausages, and all the other fake meat tofu products you would have almost as many menu choices as a non-vegetarian.
Other than soy, it depends what you like; any combination of legumes plus seeds, nuts, or grains will work. If you're looking for a single "something" you can eat three times a day, you may need to set aside our usual conceptions of what is breakfast, lunch, and dinner food. Here's some ideas:
Peanut butter sandwich made with whole wheat bread. This would get pretty boring but you add variety by toasting the bread or not, grilling the sandwich, or adding honey, jam, or sliced banana. I had an uncle who liked peanut butter sandwiches with sandwich spread (the stuff with little pieces of pickle in it). Your choice of fruits, salads, and soup to go along with it expands your options quite a bit.
Also:
Beans on toast
Corn and beans
Hummus and pita bread
Nut butter on whole grain bread
Pasta with beans
Rice and beans, peas, or lentils
Split pea soup with whole grain or seeded crackers or bread
Tortillas with refried beans
Veggie burgers on bread

No single vegetable is a complete source of protein. To get the essential amino acids, vegetarians need to combine a couple of incomplete protein foods, such as beans and rice.
You don't say whether or not you eat eggs, cheese and other milk products.
Eggs, cheese, whole grain breads, are great for breakfast items, or, when combined with brown rice, beans, etc., have the essential amino acids to get complete proteins for any meal.

There are many sources of protein, however there is much controversy over what is considered a complete protein.
Soy, beans, and nuts are some of the most common ones, though to get complete nutrition you need to eat a variety of foods.
