I'm a vegetarian, not a vegan, but I don't eat white sugar and I don't have any eggs. I haven't made any sort of bread since I stopped eating white sugar, and I'm worried it won't turn out right in the first place because of this. I'm supposed to make banana bread for a breakfast tomorrow morning and I don't really want to go shopping. So, will applesauce replace eggs in banana bread, or do have to buy eggs or egg replacer? Also, will I be better off just making it with eggs and white sugar and not eating any of it myself? Thanks.

You are in luck! This is my standard banana bread recipe. I used it just this afternoon, in fact, and it is very good. It does contain white sugar, but you can probably substitute whatever you typically use for sweetener.
Banana Bread
1/2 C shortening
1 C sugar
1 1/2 C flour
1 t baking soda
1 t salt
3 ripe bananas, mashed
Preheat oven to 325 degrees. Grease loaf pan. In a large bowl, cream shortening and sugar. Stir in dry ingredients. Stir in bananas. Bake for 60 minutes.

I use banana or applesauce in place of eggs. About 1/2 banana or 1/4 c. of applesauce w/ a tsp or two of baking powder mixed in. That works pretty effectively for me, and I use that to cook breads and cookies all the time.

I am a former chef and had to make one for a freind who has an egg allergiy, just add extra bananas, a bit more oil this keeps it moist, the apple sauce is a good idea, for it not to be to dense add 2 tablespoons of cornstarch to the flour in your batter.
I mash my bananas add the oil mix the brown sugar and either low fat margarine and oil, creaming it, add the banana mixture, dry ingredients (flour, salt, starch, baking powder or soda), then 1 cup of applesauce, fold gently this will keep the bread from getting heavy or to dense.
I bake mine at 325 d F for a longer time 65-75 minutes, this cooks it slowly and does not make it to crusty and keeps it soft and moist.

Here is a recipe, one without eggs.
3 peeled ripe bananas
3/4 cup honey
1/4 cup melted butter
1/2 teaspoon baking soda
1 1/2 cup whole wheat flour
1 big bowl
1 big wooden spoon
1 fork
1 bread pan (rub some cooking oil around the inside of it)
1 wire cooling rack
1 measuring cup
1 set of measuring of spoons
Here's another
2/3 cup sugar
1/3 cup vegetable shortening
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup mashed ripe bananas
