I don't seem to see silken tofu where i live. Is it the same as extra soft or soft or something? Are there substitutions or is it just under a different name?

silken tofu is the softest tofu. it's got a lot of water still in it, it's almost like plain yogurt that you haven't stirred.
you can use extra soft in place of it. maybe just add a little splash of water to it.

Silken tofu is a different texture--soft and gloppy. You won't find it with the regular tofu, as it comes in aseptic boxes and does not need to be refrigerated until you open it. At the Whole Foods where I shop, it's with Asian Foods.

yes, silken tofu is very solf and easy to broken. You can see it in some chinese and korean dish like ma po tofu( or do fu in Korean)
if you want to stir fry you should not use the silken tofu( it will broken into small pieces)I find out that most of western people do not like silken tofu for this. I think silken tofu also less fat
It is wonderful to add in your salad. It could use to make creamy texture.

i thought it was just a name brand, so silken would have firm, extra soft, and that. maybe not, thats just what i always thought.

Yes, you pay more for the extra water in it.
