If you use sunflower seed for a nicer taste either used roasted unsalted or raw, walnut roasted in the oven for 5 minutes to crisp them up and give them a nicer nuttier flavour.
Add if you have them a few raisins or dried cranberries for a fruit, sweet and sour taste, slice the cucumbers, grated the carrots, the raw or roasted Sflwr seeds and then the sweetness of the fruit, and dress them with a nice yougart and lemon dressing with a dash of honey, even a bit of grated lemon rind if your using fresh.

Out of those options, I would like almonds the best, but sunflower seeds would be my second choice.
I also agree with the person who said pine nuts -- they are so good on salad.

I prefer Sunflower seeds - they really balance the flavor of cucumber and produce a rich decadent balance.
