Hassayampa Casserole
1 large onion, chopped
1 tablespoon olive oil
1/2 teaspoon cinnamon
3 teaspoons chili powder
3 teaspoons cumin
1 (8 ounce) can enchilada sauce
1 pound fresh tomatoes, diced
10 ounces frozen corn, thawed
1 cup sliced black olives
3 large roasted green chilies, chopped
1 pound shrimp or imitation crabmeat
12 ounces Monterey jack cheese, shredded
12 corn tortillas
Sauté onion in oil and add cinnamon, chili powder and cumin. Stir in enchilada sauce and diced tomatoes. Set aside 1 cup sauce. Add to remaining sauce the corn, olives, green chilies, shrimp or crabmeat and 1 cup cheese.
In a 3-quart shallow casserole dish, cover bottom with some of the tortillas. Spread 1/3 of shrimp/crabmeat mixture over tortillas; repeat with 2 more layers. Top with remaining tortillas, sauce and cheese. Bake at 325 degrees F for 40 minutes.

This is a favorite at every party we have.

Mexican Stuff
1 lb ground beef
1 can Renown tomatoes and chilies
1 large onion chopped
1 small can tomato sauce
3-4 cloves garlic
1 medium pkg. plain tortilla chips
2 cans ranch style beans
Cheddar cheese
1 box Spanish rice

Brown ground beef with onions and garlic. Drain fat. Add beans, rice, tomatoes and chilies, and tomato sauce. Cook until heated. Spoon into large casserole dish and top with crushed chips and grated cheese. Bake at 350 for 30 minutes or until brown.

I like an easy Mexican style lasagna. Layer layers of corn tortilla with cooked Mexican chorizo sausage and A Mexican tomato sauce. Top with mozzarella or Monterey Jack and bake until heated through.

Chili Verde Casserola con Tomatilllos

8 ozs chopped long green chili
8 ozs sliced mushrooms
8 ozs minced red onions
8 ozs diced tomatillos
1 pound very lean ground beef browned
1 pound very lean ground pork browned
1 1/2 dozen corn tortillas
1 cup half and half
salt, pepper to taste
1/2 teaspoon oregano, powdered
1 teaspoon cilantro, chopped
2 pounds grated jack cheese

Toss all veges and meats together. Blend in half and half and spices.

Layer in this order 3 layers:
tortillas, meat sauce, cheese.

Bake in 350 F oven 45 minutes. Let cool 15 minutes before serving.

for your info. Mexican dont do casserole and those other receipes are white wash americanize style mexican food.
