Check out Deborah Madison cookbooks. She's highly regarded. I gave one as a birthday gift to a vegetarian friend and he loved it! I think the Moosewood cookbooks are also vegetarian. At least some of them.

Well, try to not eat meat on a certain day, like Monday. If you can accomplish that, add another day to not eat meat on. Keep doing that. The key is to be moderate and slowly you will get used to it. People think it's too hard to become a vegetarian - that's the stupidest thing I've ever heard. I've been a vegetarian my whole 14 years of life! Never touched any type of animal product, ever. Good luck! I hope you really do become a vegetarian. It'll do the world a whole lot of good.

Whenever I buy a veg cookbook I only end up liking the look of a few of the recipes. So why don't you pick out some recipes you think she may like from the internet and then arrange them in a nice looking scrap book. I know I'd prefere that from my partner... shows a lot more thought went into it.

I have spent lots of money on cook books if you have the internet there are literally thousands of easy and economical and more complex vegetarian and vegan recipes about. Try typing vegetarian meals or vegan meals recipes or italian vegetarian recipes or polish recipes or thai vegetarian recipes or meal recipes without meat. Or go to the Vegetarian Society web site or vegan wolf.
