mojitos are made with either sugar or simple syrup, so they don't have fat, but can be "fattening". I would try a diet coke and rum. The alcohol itself won't be fattening, it's the mixers that they use!
In terms of food, stay away from anything fried, sauteed or "sizzling"! There is usually some sort of baked chicken dish! The menu will usually let you know if it's "healthy". I get the fajita salad which is chicken, peppers and onions on lettuce with pico de gallo (at my local mexican restaurant anyways).
Just stay away from the chips!!! :)

Food: Instead of getting a combo plate, order each item you want: for instance, a chicken enchilada with verde or red sauce (not sour cream sauce) and get a salad or fruit plate on the side, instead of getting the enchilada plate that comes with 2 enchiladas, refried beans and rice. Or split a serving of chicken fajitas with a friend -- avoid the guacamole and sour cream, just eat the grilled chicken and veggies.
Drink: A mojito is about 150 calories -- much less fattening than a margarita, which varies from 350 up to 700 calories (depends on what's in the mix). For a really low-cal drink, order a vodka on the rocks or vodka mixed with a diet soft drink.

Order a lot of water :) Almost nothing in the Mexican food list is low calorie, low fat or low carb. Spanish rice and non re fried beans, but the rice has carbs. Machaca with eggs in probably the low.......ya know, just order some food and eat, just don't eat all of it. The biggest issue I see with over eating in a restaurant is the fact that they OVER fill the plates. The owners want you to come back and they have learned that giving people a lot of food for the money is a winning strategy. Don't fall for it. When you feel like you are satisfied, pour a bunch of salt all over the food, that is if you don't have the strength to stop, which happens to all of us :)

Beverages, go for aguas frescas, sort of like a lemonade but made from different fruits. Alcohol just packs in calories, no matter how much you try to disguise it.
Food, go for the tampiquena, a thin slice of grilled beef served with refried beans. You can also go for the tortilla soup or the tlalpeno soup, that in itself is a meal, or the chicken tostadas, which are pretty good and not as fattening.

Just order something non-alcoholic. But watch out for the sugar!
For food, opt for the fresh salads, spiced beans and go easy on the corn chips. I love chicken breast dishes (like mole) and grilled red snapper (with lime, jalapeno, green salsa) and cilantro lime soup (nice and zesty). Carne asada for the meal. Stay away from the beans and cheese. Or, eat Ceviche, if you really like seafood.
If you absolutely MUST drink alcohol, I'd go with a shot of tequila, or a glass of beer. Just one. The calories are in the quantity. Choose something that isn't sweet...they are full of sugar.

Tea or water is the least fattening. My wife's hispanic and we live in San Antonio, full of Mexican restaurants. Water and tea are in all of them.
