Iron
Iron is a crucial component of red blood cells. Dried beans and peas, lentils, enriched cereals, whole-grain products, dark, leafy green vegetables, and dried fruit are good sources of iron. To help your body absorb non-animal sources of iron, eat foods rich in vitamin C — such as strawberries, citrus fruits, tomatoes, cabbage and broccoli — at the same time you consume iron-containing foods.

A few of the others gave very good answers so I won't repeat what they have said but I do want to add that you can take iron supplements just be careful what company you buy from (ones who use animal testing) peta.org has a list of companies that do do not use animal testing. To increase the amount of iron your body absorbs drink orange juice when you eat foods that are high in iron.

Big, dark green leafy greens have a LOT of iron. Eat as much as you can. Peas, all beans and tofu have a great deal of protein. Try to eat a lot of soy (tofu is a type of soy) because soy has complete proteins (all the amino acids). If you are going to be vegitarian, you should go into your doctor every once in a while to check your iron levels. It's just a finger prick test, not bad at all.

Please don't worry about protein. Excess protein, especially animal protein, taxes your kidneys and strips calcium from your bones.
As for iron, chickpeas are also excellent sources of protein, iron and calcium. Remember to have something high in vitamin C with your iron-rich foods.

Tofu and any other soy products. Cheese, nuts and beans are especially good non-meat sources of protein. Soy milk.
Make a vegetarian chile with beans and top with grated cheese.
