I've tried using hickory and mesquite, but they're definitely not right.

I don't know if it's a specific charcoal.
The local places seem to use briquettes. So Kingsford should work.

Also, if you can find it, hardwood lump charcoal will work too and probably taste better since it burns hotter and you don't have to wait for the coals to turn white as you would with briquettes.

Briquettes - Kingsford
Lump Charcoal - Royal Oak
