You live in NYC. Do you know how many vegetarian and vegan restaurants there are?! Oh, my goodness, when I visit, I go nuts because there are so many options. I just haven't found a place to get a good breakfast that's open by 9:00 a.m., but lunch and dinner--whoa!
Go to www.happycow.net. It lists vegetarian and veg-friendly restaurants and also lists health food stores. I know there's a natural food store on 8th Avenue around 54th Street--I think it's called Waverly Market. And last time I was there a year or two ago, there was one in the Village, I think on 6th Avenue, but I don't recall the name.
Rynn Berry has also written a Vegan Guide to New York City, and it is updated regularly. You'll probably be able to get a copy at MooShoes on the Lower East Side. It lists restaurants, health food stores, and markets.
As for what we can eat: fruits, vegetables, grains, beans/pulses, and nuts/seeds.

Vegans can only eat things that in no way shape or form are from an animal. No milk, eggs, fish, some vegans say honey because bees make it, none of the good stuff. Your diet is very limited as is your selection of places to shop!

we can eat beans, legumes, fruits, vegetables, nuts, seeds, rices, grains, and soy. you can get basically everything you could need at a grocery store. see if there is a whole foods store by you.
if you need frozen meals amy's is a good one.
