I'm a vegetarian looking to become vegan, and I know many foods contain ingredients made from animals (such as gels, marshmallows etc...) and would like to avoid those

You need to read labels. I'm not a vegetarian, but I have intolerances to three common food additives. I have to constantly read labels, and occasionally omit a food item, as the producer decided to make it "new and improved" which just means adding more chemicals to it. Find the brands you can use in your diet and stick with them. Good luck.
