Tunisian Stew
1 small onion thin sliced
1 gr. bell pepper thin sliced
1/2 cabbage (red or green) shredded
1 cup raisins
2 TBL olive oil
2 tsp tumeric
2tsp coriander
1tsp cinnamon
4 TBL lemon juice
1-2 tsp cayenne (this is the spicy part, add more if you like)
Saute' veggies, till 1/2 done
Add 1 small can garbanzo beans
1 small can diced tomatoes
enough water to make a good stew consistency
Cook till veggies done
Make a box of Cous Cous
Serve stew over cous cous
Top with: Feta cheese
toasted almonds
very nice dish, and pretty easy to make...

Salsa Verde Mediterraneano
4 Long Green Chiles
1 small onion
3 - 4 garlic cloves
6 or 7 tomatillos
1 green bell pepper
olive oil
salt
pepper
sugar
Core and seed the peppers, peel the onion and cut in half. Remove the dry husks from the tomatillos and cut out the core. Place vegetables and the garlic in a roasting pan, drizzle with olive oil, roast at 450 degrees for 35 minutes or put under the broiler and broil until skins are charred, 15-25 minutes. Remove from heat and let cool.
When cool, remove skins from peppers and place pepper flesh in blender. Squeeze the garlic from their peels into blender. Squeeze the tomatillos from their peels into blender. Add the onion, about a teaspoon of salt, teaspoon of sugar, and teaspoon of pepper (also tastes good with a dash of Mrs. Dash or Montreal Steak seasonings!) and about 1/2 cup extra virgin olive oil. Blend until smooth. Makes about 1 1/2 cups of salsa.
Tastes good on fish, or just plain as a dip. It's awesome with a kick (;-)

slice hard tofu into 1/4 inch slices, fry golden brown med heat in almond oil on each side. Then add fresh chopped green onion, some fresh chopped jalapeno, crushed red pepper(however hot you can handle, the jalapenos will be spicy), soy sauce low sodium or regular, your preference. Cook for about 2 mins...

green pulav
1 small bowl of basmati rice
2/3 florets of cauliflower chopped
half a bowl of green peas
1 potato chopped
1 small onion chopped
spices
2 cinnamon sticks
2-3 cloves
3 cardamom without peeling
2 cinnamon leaves ( tamalpatra)
Green paste :
1 bunch of cilantro roughly chopped
4-5green chillies ( they add spice to your recipe, so add as much number as you want it to be spicy)
1/2 inch of ginger
8-9 garlic cloves
heat oil in to the pan. Add onion to it, fry it for a minute, then add green paste in to that, then add all the spices and vegetables, fry it for another minute or two.
Add basmati rice to that and again fry for a minute and then add enough water in to it. Add salt as per your taste.
place a lid on to the pan and keep it for 7-10 minutes on the mid to high flame.
You can serve this with curd or Indian Kadhi.
you can control the spiciness of this recipe.
