I have just peeled too many potatoes for Sunday lunch. (Someone's not able to come as arranged.)
I don,t want to cook them and have them tomorrow 'cos were having rice tomorrow. Can I freeze the peeled chunks of potato just as they are or do I need to blanch them first? Any suggestions?

I was always taught by my grandmother to "waste not want not"
So I would make another meal or snack with them.

I would make Au gratin potatoes, and freeze for another day.
1 tbsp butter
1 medium onion, thinly sliced
2 level tbsp flour
500ml milk
potatoes, thinly sliced
125g cheddar cheese
1/4 tsp pepper.

Melt butter in a large saucepan, add onion and cook, stirring occasionally, until onion begins to brown about 5 mins.Stir in flour, add milk slow;y stirring, add potatoes, stir to mix, bring to the boil. Stir in 3/4 of the cheese, salt and pepper.
Put into an ovenproof casserole dish, and cover in clingfilm, or tinfoil, and freeze until require.

To cook, defrost. when defrosted place in a preheated oven gas mark 5/190c/375f for 1 hour uncovered. Cover and bake until potatoes are cooked, about 20 mins more, trest with a fork to see if tender.Remove from oven
Preheat grill, sprinkle remaining cheese over the potatoes. Grill until the cheese is golden brown, about 1-2 mins. Can also add grated parmisan to give a stronger taste.
These potatoes can be served with a variety of dishes, chops, chicken, cold meats, fish. The list is endless.

For a quick snack:

Spray coat a baking tray
cut potatoes into thick strips 1 inch
pinch of salt and pepper to taste
cheddar cheese grated

Preheat oven to 400f/200c/gas mark 6.

Arrange potatoes on tray and season to taste. Bake until golden brown, and fork tender, about 40 mins. Move potatoes so that they are close together on tray: Top with the grated cheese. Bake until the cheese melts about 5 mins more.

Just put them in a big pan full of cold water, and then into the fridge until you need them.
Alot of the starch will come out into the water but that's fine- just rinse them under the tap before you boil them.

I wouldn't recommend freezing raw potatoes.. not a good idea!

Submerge them in water, then put them in the fridge.. (Make sure it's not the freezer though. My sister did that once, and, well.. The water froze. Haha.)

But anyway.. Time for an explanation..

Putting them in water will avoid any dark marks appearing on the potatoes, and will keep them from getting too soft.
Putting them in the fridge will keep them fresh!

I would blanch them first, or even cook them first then freeze them. I would not put raw potatoes in the freezer.

Don't put them in water and into the fridge, by the time you come to eat them the goodness has gone,I would boil them anyway, mash, add loads of cheese, bake till golden allow to cool, fridge them and just microwave them when you are ready! Enjoy.

Why not change your mind about having rice tomorrow and have the potato's instead?

If you fancy living really dangerously, have the rice tonight!

Boil them, mash and keep in fridge - use to make fishcakes in a couple of days!

Or just boil them and keep them in the fridge - will be ok for a couple of days. I sometimes do too many new potatoes - my family like them deepfried (urggg!!)

Blanche them before freezing. Or you could have roasts and mash!
