It's pork escalopes (steaks) not a loin. What can I cook that's a little different? I'd prefer it if it wasn't too "carbohydratey."

THANKS!

Here is one of my own invention, it is a variation on Chicken in the Heather using pork loin, or pork loin medallions.

In a mixing bowl, combine
1/2 cup cooking oil,
1/2 cup honey,
1 teaspoon Curry Powder
1 teaspoon Dry Mustard Powder
1 teaspoon Turmeric
6 Tablespoons Inglehoffer Original Grainy Mustard
Salt and Pepper to taste

Whisk together until you form a smooth emulsion.

Place pork loin medallions in the bottom of a medium sized dutch oven or baking dish. Pour the sauce over the pork, cover and cook at 375*F for 45 minutes, basting at least once.

Remove lid and cook another 30 to 45 minutes, until internal temperature is not less than 165* F. and the meat is golden brown.

I like to serve rice with this dish and I pour some of the sauce over the rice. It will also work with noodles, but you may omit them if you wish.

(If you like things spicy, you can add 1/4 tsp Cayenne, and/or a few drops of hot sauce to the emulsion.)

Move the pork chops to the refrigerator. If you're thinking of using a GF grill then the chops are probably less than an inch thick. They should defrost nicely by the time you want to use them tonight. If they don't take them out about an hour before you want to use them, wash them off, dry, season and let it come sit on the counter until you want to cook them.

yummy~ I would marinate it with wine, onion, green onion and soya sauce/fish sauce and ginger, lets it for 5 hour so that the mixture be absorb into the meat. The pork will be very tender and it will be like asian style
Have you try cook it with sweetcorn? My host father cook it like canned corn, pork escalopes, some salt and sugar, mix them and put it in the oven, the corn and the pork mixed so well . So delicous
Good luck with the dinner
