Swiss chocolate is the BEST! My favorites are Lindt and Frey chocolate, but all swiss chocolate is great!

I personally think Valrhona (French) is the best (definitely the best cocoa too) but it's comparatively very expensive and hard to find. It's very fine and rich and is an incredible chocolate but as far as cooking with chocolate goes, I use Callebaut (Belgian chocolate) which has a consistent texture and works well in all applications. Beautiful chocolate and about half the price of Valrhona.

I'd have say Valrhona chocolates , as i recall they are french.I used to work in some high end gourmet stores a couple years ago, and man the amount of chocolates i ate was astounding.I was constantly in debt to myself as i have a gulity conscience and could'nt not pay for them.they were something like $5.00 australian each.So yeah the Cocoa qaulity is high over 70%

For eating my favorite is Lindt. I love the chocolate raspberry, which is milk chocolate with this wonderful liquid raspberry center. For cooking I choose something with at least 70% cocoa solids, Montgomery Moore, but I have to order through the post.

a reputable choclatier who uses criollo beans.
scharffen berger makes great chocolate. and they have products of criollo beans :)

"Criollo is the rarest and most expensive cocoa on the market and is native to Central America, the Caribbean islands and the northern tier of South American states.[citation needed] There is some dispute about the genetic purity of cocoas sold today as Criollo, because most populations have been exposed to the genetic influence of other varieties. Criollos are particularly difficult to grow, as they are vulnerable to a variety of environmental threats and produce low yields of cocoa per tree. The flavour of Criollo is unique. It is described as delicate yet complex, low in classic chocolate flavour, but rich in "secondary" notes of long duration."

in class we had to study up on chocolate for our tempering lesson. we had almost every sort of chocolate laid out in front of us to taste. the crillo was brilliant. it has a very clean finish, and the chocolate flavour isn't punch-you-in-the-face loud, so it lets everything else stand out.

It has a wonderful milky taste & very smooth.
