There are no really 'good' snacks if you have weight to lose other than veggies. Snacking is unnecessary, and night time snacking is especially bad (except for veggies). But if you insist on eating at night, a few nuts are not too bad. Jerky is nearly no carb and also relatively low cal as well.

a piece of low fat string cheese, a handful of baby carrots, an apple.......any kind of veggie really, as long as it's fresh and no added sugar or anything. Another good snack is a few cups of no fat popcorn, which is very low in calories (not sure about the carbs though)

Celery with peanut butter
Celery with tuna salad
Hard boiled eggs
Deviled eggs
Dill pickles and cheddar cheese (no kidding, it’s a great combo)
¼ cup berries with 1/3 cup cottage cheese
Nuts
Sunflower seeds (get them in the shell so it will take longer to eat them)
Pumpkin seeds
Low Carb Trail Mix
Jerky (beef, turkey, etc.) (try to find low sugar varieties)
Low carb shakes
Cheese sticks, such as string cheese
Sugar free jello, alone or with cottage cheese and a sprinkling of nuts
Cheese with a few apple slices
4 oz plain or sugar-free yogurt with berries and flax seed meal
Smoked salmon and cream cheese on cucumber slices
Lettuce Roll-ups – roll luncheon meat, egg salad, tuna, etc.

A really good night time snack is a glass of chocolate milk. (You can get Quik or syrup at Walmart) The milk will help you sleep. If you're not worried about calories you can add some ice cream and make yourself a soda. Also, a turkey roll up would be good because turkey contains tryptophan which some people say encourages sleep.
