Absolutely the only 2 recipes I ever use on squirrels.
Most of them go into the squirrel and dumpling pot.

Usually though the best way to cook adult squirrels is some kind of slow cook method, like the dumpling recipe. I have had a squirrel stew before cooked in a crock pot that was awesome.

I made a great pot pie with a fox squirrel. Cook the squirrel in a pressure cooker, let it cool, and debone it. Mix the meat with vegetables (I used potatoes, carrots, peas, and corn) and gravy you made from the squirrel. Put any spices you like in the gravy as you make it. Roll wheat flower dough thin and cover the bottom and sides of a cast iron pan with it, and roll out another piece of dough for the top. Fill the pan to about 1/2 inch from the top and place the other piece of dough on top and crimp the edges together. Cut a few slits in the top for steam to escape and bake at 375 degrees for about an hour, or until the crust starts to brown. Cut the oven off and unless the edges of the crust start to get too dark let it sit in the hot oven another hour.

Squirrel Jambalaya
fox squirrels or 3 gray squirrels, quartered
2.5 qts. of water, approximately
1 can Ro-tel tomatoes
1 1/2 lbs. of smoked sausage, sliced (Andouille)
1 medium chopped onion
1 large chopped bell pepper
3 cups uncooked white rice
Salt and cayenne pepper to taste
Cover squirrels with water, tomatoes onion and bell pepper along with salt and cayenne. Cook in stock pot until meat readily slips from the bone. Remove meat, debone and return to cooking liquid; add sausages and rice. If necessary, add sufficient water to cook rice. Simmer in an open pot at a low boil for 30 minutes or until rice is fluffy and tender and all the liquid has evaporated or has been absorbed.
