I am that I am means I am 'awareness of being' in a body having a physical experience. The authentic self is your DETACHED OBSERVER status, rather than identifying with learned ego beliefs from other people in your early environment.
I am WHAT I am, would reference, You are WHAT you love - and nothing more. This is your essential nature - AWARENESS of WHAT you love is your purpose for coming here and ultimately the source of the experience of "eternal aliveness."

"Holy," as a word, has changed meaning over the centuries.
At one time, originally, it meant something that was not to be named or seen, except by those who were prepared and specially chosen.
The name of their most holy being was one such holy thing, and was never used. The tabernacle was likewise holy and no one entered it but the priests, no one entering the inner part except the high priest and chosen priests.
The phrase you use is how that being answers the question of "Who are you?" by Moses on the mountain.
Likewise, in the Ten Commandments, there is the Commandment to not make graven images. Again, the theme of not putting a name or shape to the being.
