Need a good cutting board that will be used daily and can withstand very very very sharp knives. No plastic or cheap wood.

no plastic because it is actually worst on knives it dull's (sp) them faster and it isnt as sanitary all the little slices you make in it hold in germs and bacteria. and little pieces of plastic can actualy get into your food.

If its for home try getting one that's made out of glass... that's what i have at home. It's a bit weird at first cos of the noise but you get used to it...
If you want a big one and it's used more than a chopping board in a average home is used ,get marble.

actually plastic is probably your best option. it is the nicest on your knives, and most are machine washable in the dishwasher. which is great for sanitary purposes. My persoal fave is from Architec. it has these great gripper feet dots on the bottom and stays put on my granite counters. i have two, one for veggies and one for meat. but they are all dishwasher safe. I use all my high quality super sharp wustoff knives on it all the time.

If you don't want plastic, then I would recomend the Epicurean. Also dishwasher safe and very durable/non-porous.

Why no plastic? Plastic is the best i think, it can be easily sanitized, and doesnt fall apart over time, like some wood ones do.

I've seen several cooking shows lately where they have a big slab of marble on the counter. they use it for cutting and rolling out pastry. I would love to know where to get me one of those.
