What my family likes to do is make some taco meat, (browned ground beef with the El Paso taco seasoning mix), and stir it into the mac and cheese. Sometimes we'll just use regular browned ground beef in it, but the taco seasoning makes it a whole lot better, (especially when I add extra cheyenne pepper when no one is looking :D).

Easy and quick stove top cooking
From Kraft Foods - One Pot Mac & Cheese Primavera
1 pkg. (14 oz.) KRAFT Deluxe Macaroni & Cheese Dinner
1 cup small broccoli florets
1 red pepper, cut into strips
1 cup cut fresh green beans
3 Tbsp. chopped fresh basil, divided
PREPARE Dinner as directed on package, adding vegetables to the pasta cooking water for the last 3 min. of pasta cooking time.
STIR 2 Tbsp. of the basil into prepared Dinner. Sprinkle with remaining basil before serving.

Kraft Mac & Cheese is the good old college stand-by.
There are infinite possibilities for variation:
Add sliced wieners, fried onions, chopped peppers, celery.
Mix the cooked macaroni with any kind of beans,
add tomato sauce, or mushroom soup, instead of the cheese.
Brown some ground round, with onions & mushrooms.
Place in baking dish & add some vegetable soup.
Pile Mac'n'Cheese on top, bake in 350F oven until bubbly.

The other day, I was making mac and cheese (from scratch, not kraft) and I looked in the fridge and I had this odd hotdog bun sitting in there. So I put a couple of pats of butter in a sausepan and crumbled up the bread in it, then when there was about 7-8m left in the baking of the mac in cheese in the oven, I spread the buttered bread crumbles over the top. They toasted up really nice and it was delicious.
Obviously it doesn't have to be a hotdog bun, but you get the idea.
Another thing I do when my nephews come over, is put cut up hotdogs in it.
Btw, I grew up on Mac and Cheese made from Velveeta and milk, and the powdered stuff is very much inferior product. It is REALLY just as easy to make, and SO much better.
Just melt a couple of tablespoons of butter, add a couple tablespoons of flour (I add white pepper, too) and whisk it together on low heat. Add 2 cups of milk, and add Velveeta to taste till it melts. (I add about 1/2 -> 2/3 of a cup. Pour this mixture over the pasta (I prefer shells to macaroni) and bake it in the oven on 400 for 35-40 minutes. It doesn't have that powdery taste like the instant stuff. Much better. And you can add cheese to taste if you like it REALLY creamy.

My husbands family makes something called "Hotdog-Chilli-Mac." You make teh mac and cheese, add a can of chilli, and toss in some sliced up hotdogs. Everyone loves it. I don't but I don't like hotdogs.
I make a tuna cassorole my husband just loves. I make teh mac and cheese, add a can of draied tuna, mix it together and crush up some crackers, it doesnt matter, ritz or saltines, I use whatever is on hand, mix half into the noodles and tuna and sprinkle the rest on top. Top with pepper and serve with peas.

I like to turn it into "bourbon delight". Here is my famous recipe:
1 package premade grilled chicken strips
1 teaspoon tabasco sauce
1 1/2 tablespoons spicy barbeque sauce
1 tablespoon lemon juice
1 teaspoon garlic powder or fresh garlic-crushed
Directions:
Mix all ingredients together, and put in microwave for 1 minute. Then mix with hot macaroni and cheese.
Put in bowl, and serve.
Enjoy!!!!

this is what i did the other day: i boiled regular spiral noodles, and two minutes into boiling that i put in the macaroni noodles, because they cook faster... anyway! after they had cooked and had been drained, i put some milk and some butter in there, stirred it up, put the powdered cheese in there, added a little cheese that was in my fridge, stirred it in, then i added a big can of spaghetti sauce to it all, and some garlic, and stirred it all together and let it heat up. it was good! so, all you need is your package of noodles and cheese, and a little extra noodles to bulk it up, milk, butter, and spaghetti sauce. ta da!
other ideas:
add chili to it
add sliced hot dogs to it
add small diced tomatoes to it
leave the cheese off, and use a different sauce, perhaps garlic and butter, or lemon and butter, or spaghetti sauce, etc
add seasonings to it, like italian seasoning
or...eat it plain!

I like to make chili-mac. Add 1lb of taco seasoned hamburger,14oz can of diced tomatoes,top with chs of your choice and bake at 350 till chs is melted.
Obviously the mac n chs is made normal,hamburg is cooked,and you can add diced tomatoes w/jalapenos for a little kick,or salsa if you like.

Put in some hamburg, peppers and oninos, chili powder, and you have chili mac.
Or toss in a can of tuna and have tuna mac.
How about some shrimp, okra and tomato sauce and have jumbalya mac.
And the best, put in some spam, jalepenos and garlic and voila, macspamalicious.
