Place an egg at the bottom of a glass full of water. Eggshells are porous, and over time they dry out, letting air in and moisture out. So...
* If the egg lies at the bottom on its side, the egg is pretty fresh.
* If the egg sinks, but with one end up, it's getting old but is still edible.
* If the egg floats at all, it's time to go buy some fresh ones.
If you prefers egg whites, then save some time and money by buying eggs in bulk and separating them right away. Egg whites freeze very well and can even be kept up to three or four days covered in the refrigerator.

I just boiled some eggs that are 7 weeks past the date on carton. Taste good. Now I have another 7 days to consume them.
Note: I keep my fridge at 35 to 37 degrees.

What is funny id that they are good for some time to come if they are in the fridge. In Europe eggs are not even kept in the fridge nor do they have expiration dates. This is one of those weird regulations that the USDA decided we needed years ago.

I would say that they were ok but listen what I did... (I am a bachalor) I bought a box of eggs with 18 eggs and put them in the refrigerator and used them when ever. but the last 4 I did not use or try to use for about 6 months and when I got them out the were empty... You have, under refrigeration, another 4-6 weeks.
The older an egg the more air is in it, so the inside will be slightly smaller, but perfectly good to eat.

I wouldn't eat eggs past their expo date... Salmonella isn't a fun thing, and expiration dates are on there for a reason...

If you crack them open and they still look and smell fresh they are probably fine. The sell by date isn't the same as the use by date.
