my girlfriend pointed out that it's in Jimmy Dean sausage but I'm just not sure It's Monosodium Glutamate? Is that MSG?

Yes, MSG is short for MonoSodium Glutamate. It is a preservative, basically a special kind of salt. It's not very good for you, but as long as you don't eat huge quantities of it you should be fine. And let's face it, sausage in general is not exactly health food.
