Many products purchased has thickening agents like potato starch or wheat gluten, etc. Where can we buy thickening agents without using corn starch. I prefer a light thickening for sauces and corn starch is too heavy.

You could use guar gum.

I use arrowroot starch, but be careful not to let whatever it is you're thickening come to a boil.

I usually use either flour or cornstarch. When I make lemon meringue pie, I use a mixture of half flour and half cornstarch -- I found that the custard is too runny if I use all cornstarch and too thick if I use all flour. You might try using less cornstarch or a mix of flour and cornstarch.

minute tapioca ... i use it in cherry, blueberry, rhubarb and peach pies. I haven't been as pleased with the tapioca in apple pies.
