I am baking homemade yeast rolls and I need to know the difference between active dry yeast and quick-rise yeast? Please explain the difference.

The quick-rise does just that. It's like instant oatmeal as compared to regular 10 minute oatmeal. Keep your eye on the quick-rise, because they will be risen and ready to bake earlier than usual.

There are all different types of "dry" yeast. There is Instant Yeast, Active Dry Yeast, and Brewer's Yeast. Brewer's is just that... For brewing. If you have 1/2 a teaspoon of active dry yeast and want to substitute instant yeast, you only need about 1/3 teaspoon. The reason is, there are more live bacteria in instant yeast than active dry, and you don't have to rehydrate or "bloom" it to use it.

they are really the same. the difference is as in the name. one will help your dough rise faster. the active dry yeast i have found is the better of the two. the bloom time is also different in the two. i would stick with the active dry and just wait the ten minutes or so to let it really bloom. When you put the yeast in the warm water to let it bloom, put a little sugar or honey in it. it will help it bloom better. the yeast likes sugar.

active dry yeast is the dried fresh yeast..and quick rise yeast is vacumed (instant) fresh yeast which added some vitamin or other ingridient for help the yeast raise quickly..usually use glucose or other protein..
