Vanilla Wafer Cake
6 eggs
2 sticks margarine
1 (7 oz) pkg. coconut
1 (12 oz) box vanilla wafers
2 cups white sugar
1/2 cup sweet milk
1 cup pecans
- Cream together eggs sugar and margarine.
- Add milk, coconut, nuts and crushed vanilla wafers. Mix well.
- Bake in greased and floured cake pan (either tube or 13 x 9 -inch pan ) at 350° F. for 50 to 60 minutes or until done.
Frosting:
1 (8 oz) pkg. cream cheese
1 lb. box powdered sugar
1 stick margarine
1 teaspoon vanilla
- Cream together all frosting ingredients.
- Mix well spread over cake.

Layered Cookie Bars
3/4 cup butter or margarine
1 3/4 cups vanilla wafer crumbs
6 tablespoons HERSHEY'S Cocoa
1/4 cup granulated sugar
1 (14-ounce) can sweetened condensed milk (not evaporated milk)
1 cup HERSHEY'S Semi-Sweet Chocolate Chips
3/4 cup HEATH BITS 'O BRICKLE Toffee Bits
1 cup chopped walnuts
Heat oven to 350 degrees F. Melt butter in 13 x 9 x 2-inch baking pan in oven.
Combine crumbs, cocoa and sugar; sprinkle over butter.
Pour sweetened condensed milk evenly on top of crumb mixture. Top with chocolate chips and toffee bits, then nuts; press down firmly.
Bake 25 to 30 minutes or until lightly browned. Cool completely in pan on wire rack. Chill, if desired. Cut into bars. Store covered at room temperature.
Makes about 36 bars.

Vanilla Wafer Delight
One 16-ounce package vanilla wafers
3/4 cup margarine
1 large container of Cool Whip
2 cups powdered sugar
One 8 ounce package cream cheese
1 cup pecans, chopped
One 5.9-ounce box Instant banana cream pudding
3 bananas, sliced
Crush vanilla wafers; reserve one cup for topping. Melt margarine: pour over vanilla wafers. Press in bottom of pan. Cream together cream cheese and half of the Cool Whip. Spread over vanilla wafer layer. Sprinkle pecans on top. Prepare pudding according to package directions. Pour banana cream pudding over pecans. Slice bananas over banana cream pudding layer. Spread remaining Cool Whip on top. Sprinkle remaining vanilla wafers for topping. Chill.

"Cheeseburger in Paradise" Cookies
20 cookies
30 min 30 min prep
2 (12 ounce) boxes vanilla wafers
1 egg white
1/4 cup sesame seeds
4 cups sifted powdered sugar
4-5 teaspoons milk
1/2 teaspoon almond extract
green food coloring
yellow food coloring
red food coloring
1 cup shredded sweetened coconut
2 (10 ounce) packages of peppermint patty cookies (anything resembling the girl scouts' "thin mints")
Place whole, perfect vanilla wafers on 2 trays; one with wafers facing up, the other with wafers facing down.
Each tray should have the same number of wafers (35-40).
Brush wafers (rounded side up) with egg white and sprinkle with sesame seeds.
Set aside.
To color coconut, place in small container with several drops of green food coloring.
shake well and let sit.
To make"cheese" frosting, whip powdered sugar and milk together til smooth.
add yellow and red food coloring til desired orange tint is achieved.
To assemble"cheeseburgers", use dab of frosting to glue peppermint cookies into place on to wafer (flat side up).
This is your"burger".
Now spread frosting"cheese" on and sprinkle with green coconut"lettuce".
Dab with frosting again and top with sesame wafer.
Repeat until all"burgers" are made.

Mini Cheesecakes

1 cup sugar
1 tsp vanilla extract
12 Nilla wafers
Mix cream cheese, eggs, sugar and vanilla. Put pan liners in a muffin pan (makes a dozen) and put a Nilla wafer, flat side down, in each liner. Pour batter in (it will fill them up all the way) bake at 350 for 15-18 minutes, and when you take them out of the oven, the tops will fall, leaving you a perfect little hole for your choice of topping.

I take and crush vanilla wafers and place them in a 9 x 13 pan/dish. Then I mix two boxes of Jello Instant Banana Pudding and pour over it. Then I cover the pudding with Cool Whip. I usually reserve a few crushed cookies to drizzle over the Cool Whip. Refrigerate overnight.

Whenever I see vanilla wafers, I want banana pudding! It brings back fond memories from childhood, my mom would make it for us! I will find a good recipe online for you!

you can always use it as a base for any icebox recipe or no-bake recipe.
trade the crushed graham crackers for crushed vanilla sugar wafers.

A surprising use is as breading - my Aunt used to run them through the Cuisinart add salt, pepper, turmeric and curry then bread chicken breast and bake it is amazing! Just serve with a salad so you reduce the guilt factor of eating dessert for dinner.:)!
