My wife will take a 15 dollar steak and ruin it by cooking it until it is crisp and black. Any cut of meat will be more tender if it is not overcooked. I prefer mine to have a little pink in it.
Venison is even more likely to be tough if over cooked since the meat is not as marbled ( hardly any fat) so my venison steaks have a little more red to them.
Personal preference is all that matters. My teeth are plenty good enough for a tough steak but it doesn't have to be that way. With a lot of cuts, marinating doesn't necessarily make it more tender and it can dry the meat also depending on the marinade.

Marinate them in Italian dressing with some Tony's and then grill them to a nice medium. Doesn't matter if its ribeye or t-bone they are both very good if cook right.

I would go with the T-bone all day long...you need to give it about 2-3 hours of marinating (your choice of what kind)....then grill for maybe 4 minutes on one side, then another 5 mins on the other side...that should make it medium well for you--> oh yeah leave it on an open grill..don't cover it. this will make your steak just barely pink in the middle and the flavor should be absorbed by then......

I'll take a ribeye please. Very rare. Do you have some fries to sop up the juice with? No steak sauce. And a nice crisp salad with a light vinaigrette. I'll be there in a few. Do you need me to pick up the wine?

I like my steaks med-rare, I prefer rib-eye, even though it is basically a T-Bone with out the bone.

I like mine on the grill well done with mesquite seasoning.i slap it on a hot grill to sear it and then turn the heat down to low to keep it from drying out.i like both ribeye and t-bone but prefer a lean ribeye.no sense paying for a bone you cant eat
