If not, why is it okay to bake a cake with eggs in it, leave it out for 3 days, and then eat it?

That's a good question. I never thought about it that way. If you just baked an egg, it would get awfully dried out sitting out unrefrigerated. But I think it's OK in cake....after all, most cakes' instructions say to cover loosely but they don't mention refrigerating generally. I don't usually refrigerate cake because I don't like the texture of it when it's cold, and it seems to go stale faster.

I would not eat a baked egg that was out for 3 days. But I would not eat a cake that was out for three days either. I would only eat a cake that was out for 1 day.

*FYI* Keeping your cakes in the refrigerator keeps them fresher longer!

Because the baking process kills the salmonella bacteria that would make you ill. The cake will eventually grow mold, but not after 3 days.

Geez, whose house does cake last 3 days in? Not mine!

We refrigerate it the next day after it's baked, if there's any left.
