you can tap her on her shoulder anytime to get her attention, but why would you place your fist on her back? I don't know of any reason to put your fist on someones back except in a fast forceful motion to hurt that person.

a gentleman, can place his open hand on the small of her back as they are walking through a doorway or being escorted to a table. it's kind of a way of guiding her and is chivalrous. this is only to be done on an official date. not to someone you don't know.

You shouldn't make the 'first move'. Let the girl touch you first. That way, she's letting you know her comfort level.
