Many differences:
A canoe will hold two people easily, three or four people fairly comfortably, plus gear. A kyack will hold one. (with few exceptions)
A kyack will flip in the water (if you know what youre doing) so that you can right yourself if you turn upside down. A canoe will not do this. You fall out and struggle to get back in.

In simple terms:
A canoe has no deck (it is open), the paddler kneels and uses a single bladed paddle. Canoes can be built for solo paddling or for 2 or 3 paddlers.
A kayak is decked and the paddler(s) wear skirts to completely enclose the boat. A kayaker sits to paddle and uses a double bladed paddle. There are 1 and 2 person kayaks.
There are some K1 kayaks where the paddler kneels, wears a skirt, and uses a single bladed paddle.
In whitewater paddling, skilled paddlers can roll canoes as well as kayaks. The whitewater canoes can be rolled because they have large flotation bags to displace some of the water.

A lot: Kayaks are made usually for only one person and sometimes two people the Top of a Kayak is covered all but for a small area usually a round or oblong hole in the center for the person to set in.
A conoe on the other hand is completely open no part of it is covered. It has an open hull design. It's designed to carry more than one person, usually two or three and sometimes for depending on the size, plus a lot more gear or cargo. Hence canoes are larger than Kayaks.
The hulls are also completely different. The Kayak evolved to be more or less self righting so instead of capsizing, because the waters the Kayak evolved in are much rougher and faster than the waters the canoe evolved in. You roll over in a completely 360 instead of just capsizing once you learn how to do it.
Conroes on the other hand when they capsize they spell out all the passengers and gear.
Kayaks evolved mainly in the Arctic and sub Arctic where the water is at or near freezing as well as the air temperature. They are designed to protect the persons in them from the elements more so than the conroe hence the covered top or deck which protects the lower half of a person body from the elements.
Conroes on the other evolved in much warmer climates where the water is not as fast or rough, and hence the open hull design for maximum carrying capacity.

A canoe is an open boat, double ended and uses paddles. You kneel in the bottom. You paddle only on one side. Canoes can be for one but generally are for 2 people.
A kayak is a covered boat(also double ended), some have aprons that completely seal the person in and the water out. There are seats, unless you have the sit upon type of kayak. It is paddled with double headed paddles. You switch sides. There are kayaks for 2 people. (I have had 2 small children in ours with another paddler) I had done the same with our canoe.

a kayak is made for 1 person where its up to u to survive lol whereas a canoe is made for two r three people which is beta as ur not on ur own

kayak has closed cockpit, using paddles with two blades, the canoe is open and use one paddle blade (basically).
