soak all the lettuce with ice water first to make them crunchy. make sure all the ingtredient are FRESH just simply mix with salt pepper and extra virgin olive oil

Mock Caesar Salad
this is a GREAT and simple salad. 'I first tried this simple salad at a dinner party 'The hostess wouldn't part with her secret recipe, so I experimented until I perfected the thick Parmesan-and-garlic dressing myself.
INGREDIENTS
3 tablespoons cider vinegar
1/2 cup shredded Parmesan cheese
1/2 teaspoon garlic powder
1/3 cup olive or vegetable oil
7 cups torn romaine lettuce
DIRECTIONS
In a blender or food processor, combine the vinegar, cheese and garlic powder; cover and process until combined. While processing, gradually add oil in a steady stream. Place romaine in a salad bowl; drizzle with dressing and toss to coat. Serve immediately.

Make your own dressing, rather than using the boring store bought stuff. Just take 1/3 cup vinegar (balsamic/red wine but NOT white vinegar) and add 2/3 cup olive oil, then spice it up (oregano, marjoram, parsley, salt, pepper, thyme, whatever smells like it might go well in a dressing). You can add Dijon mustard to it as well. Or take unpeeled garlic cloves and roast them in a pan until they have brown spots, then peel them and put them in a blender with the above oil/vinegar combination. Roasted garlic adds a great flavour!
Adding fruit to salad can make them really good too, like raspberries or orange slices (even canned orange is good), apples, pears. Or dried fruit and nuts makes a salad great.

WHen ready to use, wash/rinse in cold water your lettuce of choice. Salads are so fun as you can add whatever you have on hand.
>>Garden Salad:
Green lettuce, sliced cucumber, shredded carrot, sliced celery stick, mushrooms, diced tomatoes, green onion, cubed slices of cheese, sliced/diced ham, boiled egg sliced, and italian salad dressing or an oil/vinegrette dressing~ Have a slice or two of baguette with salad
>>Ceasar Salad
1-2 cloves fresh garlic sliced
1/2 cup veg. oil
1 tsp. salt
1/4 tsp. pepper
1 tbsp. worchestershire sauce
2 tbsp. vinegar
3 tbsp. lemon juice
1 romaine lettuce
1/2 cup grated parmesean cheese
Mix all the first ingredients together in a cup, cover with seran wrap and put in fridge for 2 -3 hours., to enhance the flavours.
Break up lettuce and wash, then spin /pat dry...place in clean dish towel , wrap and place in bottom crisper of fridge till ready to use. (20min before ready to serve)
In large serving bowl, put some lettuce pieces in, to cover bottom of bowl, sprinkle some parmesean cheese ontop, another layer of lettuce pieces, again more parmesean sprinkled ontop and more lettuce.....
Spoon out the garlic pieces from the cup of oil mixture...(you can use these garlic pieces to make garlic bread if you like),
Mix well then slowly pour over salad, stopping to toss / coat all pieces.
If you need more parmesean , you can always add more~

Or, slice up some cooked left over chicken and add to ceasar salad~*

Experiment with the different lettuces out there..you'll find they're quite tasty. Always use the lettuce up before it goes off.
Add croutons , bacon bits...whatever you feel like* :) ENJOY

I get the most compliments for my 24 hour salad----the salad that you do not toss and mayo on top.
I think the best thing you can to do make a salad good is....break or tear your lettuce in small pieces---use mix of iceberg and greenleaf and most important.....DRY your lettuce after rinsing. After breaking my lettuce I layer it in a plastic bag with white paper towel and let it dry.

Fresh Green Pea Salad
This recipe for green pea salad includes cooked crumbled bacon, green onions, sour cream, dill, and cooked green peas.
INGREDIENTS:
3 cups fresh green peas or 2 (10oz) pkgs frozen, thawed
4 to 5 slices crisply cooked bacon, crumbled
1 cup sour cream
1/4 cup chopped green onions or chives
salt and pepper. to taste
mint or fresh dill, as desired
PREPARATION:
Cook peas until barely tender; drain well and chill. Combine all ingredients and refrigerate until ready to serve. Serve on lettuce.

lettuce, tomatoes, onions, celery, cheese, i rinse all my veggies and fruits with fruit and veggie rinse. it kills things that water cant distroy. this particular one kills thinks like lice, takes the wax off the foods and removes pestides that are sprayed on the foods when it is harvested and grown. it can remove posion ivy and oak etc. I think you will benefit from it greatly!!
