don't know if you're into pasta much, but making some orzo (or fusilli or elbow macaroni) is fairly easy. just gather some olive oil, salt, pepper, basil, tomato, pasta... and voila! you've got a meal. plus, there's always extra so you can eat it for the next few days.
like previously mentioned, amy's has a good variety of frozen meals. if you have a trader joe's near you, they've got a good enough variety of frozen vegetarian meals, including buffalo "chicken" wings, masala burgers (and other patties), pizza, etc.
if you're in a hurry, just slap some tofurkey (or yves) slices, mayo, and mustard in some bread, and you're good to go!

Amy's Kitchen (www.amys.com) is an all-vegetarian company that makes veggie burgers, frozen dinners and snacks, soups, and all sorts of good things.
Yves (www.yvesveggie.com) has a few refrigerator meals that you can pop into the microwave.
You can also buy veggie deli slices, mustard or mayo, and veggies and make sandwiches.
You can find some simple recipes on www.vegweb.com.
"Garden of Vegan" by Sarah Kramer and Tanya Barnard has a section on microwave cooking.

I make this vegetable medly and we just recently started making pizza with it. Take a boboli crust or any other pizza crust. You are going to slice up some zucchini, squash, tomatoes and mushrooms, onions, different colored peppers (you can add broccoli or any other kind of veggie) combine the chopped up veggies in a pan for grill (no holes in bottom) or you can cook it on the stove. mix in some extra virgin olive oil so it does not stick and some italian dressing and if you choose you can add some spices. Cook thouroughly on grill or stove until veggies are soft. Take your pie crust and brush some extra virgin olive oil on it, put veggies over the pizza and bake it as per the pie crust directions. You can add cheese too if you wish. It is a big favorite in my house.

go to allrecipes.com and search for vegetarian. or search for vegetarian black bean pizza. Tips: Instead of storebought pizza dough, get pillsbury canned pizza dough. roll it out and cook for 5-8 minutes. then follow the recipe. Its really goooood!!!!

whack in oven, take out, enjoy!
Jacket potatoe with cheese and baked beans is also really easy
I don't do ping cuisine - those rays are bad for you I reckon....

i enjoy vegtable stir-frys with sweet and sour sauce. Or just packets of pasta or noodles with the sauce already in the pack...quick and easy to make.
