I have a vegetarian guest coming to stay with me for a few days. I would like to do something special as a welcome dinner.

There's so much choice I don't know where to start!

How about a simple mozzarella, tomato and avocado salad for starters (dribbled with a touch of olive oil and garnished with fresh basil leaves).

Then, perhaps some filled pasta with a creamy mushroom sauce (very simple - fry some onions, garlic and mushrooms till golden, then add some wine or stock and put a dollop or two of philadelphia or veggie stilton and heat till it's melted, then just pour over pasta and serve with crusty bread and a green salad).

As for pudding, you could do almost anything from simple strawberries and cream to a baked alaska.

Pasta is always good. If you use a jarred sauce, make sure it doesn't have any meat in it. You can use veggie crumbles or tempeh to give it a meaty texture. And if you serve anything with cheese, make sure it's made without rennet.

Penne Pasta with Pesto Sauce (you can look up the recipe for pesto from scratch but most grocery stores have it in the bakery).

Vegetarian Lasagna Rolls (boil the lasagna and fill each strip with a mixture from ricotta, mozzarella, sour cream , Parmesan cheese, broccoli, carrot slices, green peppers and tomato chunks, roll up & then bake for about 20 minutes).

Stuffed crescents (unwrap unbaked crescents and fill with a mixture of cream cheese, sliced almonds and honey then bake as usual)

Fresh garden salad loaded with veggies and nuts.

I'm vegetarian, not vegan so a lot of my recipes contain dairy. Make sure your guests are not vegan before preparing.

Recipe 1

Cheese & Sweetcorn Flan

Ingredients
Pastry
200g 85% wholewheat flour
100g margarine
pinch salt
few drops lemon juice

Filling
250g hard cheese
1tbs flour
1 small tin sweetcorn
2 free range eggs
150ml single cream or milk

Method
1. Make pastry by sifting flour and salt together, rub in margarine, add lemon and enough water to form a dough.
Leave to rest in a cool place for an hour or so.
2. Lightly grease a deep flan dish and line with rolled out pastry.
Grate the cheese and toss with the flour.
Place half in the flan.
Drain the sweetcorn and arrange in the dish.
Cover with the remaining cheese.
Beat the cream and eggs, pour the mixture over the cheese and sprinkle with nutmeg.

3. Bake at 375°F/190°C/Gas Mark 5 for 40 mins.

Recipe 2
Chunky Nut & Vegetable Roast

Ingredients
1 carrot, scraped
1 onion, peeled
1 stick celery
200g mixed nuts (e.g. almonds, peanuts, brazil nuts)
2tsp Marmite
2 free range eggs
1 or 2 tsp mixed herbs
salt & pepper
Dried breadcrumbs (for coating tin)

Method
1. Set oven at 190°C/375°F/Gas Mark 5.
Put all the ingredients into a food processor and process until vegetables and nuts are chopped into chunky pieces.
Put into a bowl and mix with remaining ingredients.
2. Line a 450g/1lb loaf tin with a strip of non-stick paper, grease well and sprinkle with dry breadcrumbs.
Spoon mixture into tin and level the top.
3. Bake uncovered for 45 mins until set.

Recipe 3

Mushroom & Cheese Macaroni
Ingredients

400g wholewheat macoroni
60g butter or margarine
2tbs chopped parsley
450g mushrooms
60g grated cheese

Method
1. Cook macaroni according to manufacturer's instructions.
Slice mushrooms and fry in the fat for 8 mins then add the parsley.
Drain macaroni and mushrooms and toss together lightly.
2. Serve sprinkled with grated cheese.

Pasta with a chunky garden sauce or Pasta tossed with olive oil, garlic and steamed broccoli

Veggie stir fry over brown rice (cook rice in vegetable stock)

Grilled marinated veggies on a toasted hard roll

Lundberg makes a vegan risotto. Those are really good. I always add chunks of sauteed veggies to make it a meal.

Layered veggie casserole. I use zucchini and yellow squash, sliced tomatoes etc. There are many recipes for this online.

If your guest eats cheese, veggie lasagna or some other kind of pasta would be good. Many delicious mexican dishes can also be made vegetarian. Even a salad with chickpeas and/or cheese could be made special with good bread and an array of colorful veggies.

Well pasta's are a good way to go. Especially something Thai/Chinese noodles such as raman or something else you would find in a supermarket. You could also make veggie lasagna. Very good!

When my vegetarian step brother and sister go to visit my dad and step mum. They usually have a nut roast with all the trimmings usually associated with a traditional Sunday roast
