We are planning an open house for graduate students that will last for about two hours. For food, the plan is a sandwich bar, i.e. rolls, deli meats, cheeses, mustard and mayo, and some lettuce and tomato. Is there something we should add for vegetarians - I kind of feel like the lettuce, tomato, and cheese isn't sufficient. I've seen tofu bologna and the like before in the grocery, is it tasty stuff that you'd recommend?

Nice of you to care for vegetarians...we don't all enjoy the same old boring salad option. Im sure they will aprecciate it.
Some suggestions
Bean burritos or bean dip
hummus dip
falafel
veganaise (vegan mayo)
toffutti "hams"
wedges
soy rice or almond cheese
garlic bread
vegetable/tofu or fruit kabobs
spring rolls
guacamole and chips
veggie corn dogs

Honestly, I would NOT spend the money for expensive meat substitutes for your vegetarian friends. Not everyone eats that stuff and not all brands are very good. I would instead add a few more veggie options to the sandwich bar. Like...
thinkly sliced red onions
pickles
slices of red bell pepper
cucumber slices
avocado (dip in lemon juice or don't use it - it'll go brown - or make some guacamole and add lime juice to keep it fresh looking - to make guac just mash avo with salt, black pepper, and some chopped onion. Oh yeah, and the lime!)
Not only will these veggies make a DELICIOUS sandwich for the veg people, but it'll make your sandwich bar more complete for everyone.

I think you should add the following:
cucumbers
alfalfa sprouts
hummus
onions
artichokes (marinated)
pita bread
various peppers (green, red, yellow)
To answer your other question, I really don't care for the vegan lunch meats. They don't taste right. Appearance-wise, they're dead on, but the taste is lacking. Everyone is different though! You might get a few packages just to see if someone might want them.
How sweet of you to think of the vegetarians! There should be more people like you in the world.

I agree that many vegetarians don't like the imitation meats, plus it will take a lot of explanation or signage to identify the veg meat.
In addition to the sandwich bar, you could have a tray with hummus, tabouleh and baba ganoush with pita wedges. You can buy all of these premade. Also consider a pasta salad.

Put out some whole wheat pita bread and hummus. A tasty sandwich with hummus, lettuce and tomato is made.

You can marinate,bread and fry extra firm tofu and it makes good sandwiches. Egg salad. Hummus. Soy burgers.

I wouldn't worry too much and just stick with your original plans. Let them forage on what you put out. No matter what you do, they will complain about the lack of food and may even start a ruckus. You can't please these idiots. If you are lucky, they will leave early.
