Broccoli - nice colour, high fibre, good taste, etc.
I chop up stems in processor & make soup.
1 cup water & boullion cube, or chicken stock.
Add chopped broccoli & bring to a simmer.
Add 1 cup of milk to 2 tbsp of flour & whisk.
Add slowly to pot, stirring until mixed & bubbly.
Add grated cheese before serving.

Bell peppers, I don't know why I just love them. Some place I read they can be high in lithium so maybe that relaxes me or something
Kale is a second favorite green for me
and then there are dandelion greens and fiddleheads (ferns) we used to pick wild; those are really great, wonder if there is anyplace u can buy them?

I guess it would have to be broccoli. It has the best flavor of all the green vegetables I think, plus it's so healthy for you.

before: broccoli and asparagus.
now: kale. it's so delicious. it also has a high calcium absorption rate, so more of the vitamin is absorbed by your body.
try this recipe out:
1. steam kale until it's bright green. don't overcook!
2. mix in a bowl the following ingredients: 2 tbsp. flax (or olive) oil, 2 tbsp. tamari (soy sauce), 2 tbsp. lemon juice, and 2 tbsp. toasted sesame seeds
3. pour mixture over kale and toss to make sure mixture coats kale evenly.
4. devour. enjoy!

I don't think I have one that I like more than the other. I love spinach raw and cooked in all kinds of dishes. Broccoli lightly steamed or cooked is awesome. I love zucchini in stir fry or bread. I love green beans- how they smell fresh from the garden and I love them in casseroles and stir fry. I think the point is I love them all for their versatility and that they are good for me! Great question!

mmmm Greens "Let me Count the ways".....
#1 Beet Greens, they are lovely cooked & I also luv them in my fresh made juice. High in Vitamns.
#2 Swiss Chard(or Rainbow Chard) they are mild greens when cooked, nice raw in salads.
#3 Baby Spinach, I used them all sorts of ways. Cooked, Raw in salads, Raw in Green Smoothies, Raw in Juice. YUM.
#4 All kinds of Sprouts, again salads, sandwiches, I even pop a tiny mound of them as granish on my rice. Very pretty & adds zest to a bland food.

I love broccoli; it is actually something that I like that's GOOD for me, and that's rare! I like it plain; I also have a couple of good chicken and broccoli casserole recipes. Broccoli is easy to fix, inexpensive, and goes with just about anything, and you can make it plain or fancy. I didn't eat it before I married; it, asparagus, unsweetened ice tea, and my son are just about the ONLY good things that came out of the marriage ;-)

green beans cause they are low in calories but taste good with mustard and I love mustard. When I am not dieting, I throw cheese and meat sauce on green beans.
