It's called "queso blanco." Most larger supermarkets have it in the specialty cheese area.

My girlfriend goes and buys the in walmart the great big block of it before its ever cut they sell it for 20.00 bucks.White american /land of lakes and then she mixes the spices with itand the Jalepenos ...
The Mexian restaurants around here have really crappy queso(I mean its as runny as milk).Ive bought the walmart stuff and its just doesnt taste the same as fresh.So,I would find a great recipe on the net from one of the copycat sites or top secretrecipes.com and see if they have a great one.

My super walmart carries it with their special cheeses. Like the brie, parmesan, etc. It comes in this plastic and says its a melting cheese. It comes in a plain and a jalapeno version that is kind of spicy.

In addition to the places mentioned you may find local Mexican or Hispanic markets that carry it. We have a small market like that I like to shop at.
