i have to put in my $.02 worth. one thing that the best fried rice is day old or older (cooked). i know in the Philippines. they do that & i believe it was the same way originally in China. they usually cook a fresh pot every day & the next whatever meat & veggies were left then it is fried together usually with fresh garlic & scrambled eggs & some green or whatever onion is available. now days, of course it is not so much that way but before fried rice was a way to use leftovers. although you can use freshly cooked rice for fried day old is best. & i believe everyone else is correct in listing white long grain rice.

because of the fact the question isn't possibly specific, I desire short grain rice (often called sushi rice) with in basic terms a pinch of salt, or formed into Onigiri. Now, if the question is the thank you to make chinese language Fried Rice, use rice (short grain is the superb wager, medium grain is 2nd superb, and could the two be brown or white), cooked in accordance to guidelines on kit (often a million/2 cup rice to a million cup water over severe warmth until boiling, then conceal and decrease warmth to low for 20 minutes or until all water is absorbed; permit stand for ten minutes) then place in Wok (or great skillet) with oil, often sesame, yet despite you like, yet ideally with a severe smoke factor, which makes olive oil no longer the superb thought. upload soy sauce, egg or tofu, or despite you like in it. If I make fried rice I purely make it common rice with some soy sauce and that i could purely upload some fried tofu. Falafel seasoning works nicely. And for Yellow rice it certainly relies upon on why that is yellow. Is it Saffron? Then heck yeah! Is it cheese? nicely, provided that i'm no longer feeling quite vegan that day. Is it nutritional yeast or turmeric? particularly.

White rice. And traditionally, day old rice (leftover). It fries better and gives you a more classic fried-rice taste and texture.

It is white rice mixed with soy sauce and thickened with just a little bit of corn starch...also, be careful as to how much soy sauce you use, it can be very salty.
